Use it up, be creative

I had hamburger that needed to be frozen or used. So I did both. I had three pounds. Two pounds went in the freezer in single pound chunks. I had "discounted" bell peppers, and mushrooms I purchased last week. They needed to be used. Of course I threw in the half of a sliced onion. I prepped rice earlier this week and divided it into three portions. I decided to use two portions, so maybe two cups of cooked rice. I took a 9x13 pan, sprayed it, put the rice down as a layer. I topped that layer with beef cooked with mushrooms and onions. Then a layer of sauteed bell peppers. Of course I seasoned everything as I prepped it. Salt, pepper, worchestershire sauce and garlic powder. I had a can of spaghetti sauce on hand, so poured it over and topped with mozzarella and cheddar cheeses. Everything was fully cooked so I only had to heat it at a fairly low oven for a while until the cheese melted. With the veggies and rice along with the ground beef I have enough food for four meals for Bob and I. Of course we shall eat things with it. Tonight it was fresh strawberries. I put enough for another meal in the refrigerator, and two more containers for two more meals in the freezer. This was easier than stuffed peppers, and less messy. I liked it a lot.

It was very good. It was not hard and since it is done we will have it more than one time.

Sounds like I could do something like that with the thawed ground meat I have in my fridge. I made and ate hamburger for dinner but I´d like something else tomorrow.

That sounds really good! I did something similar the other night by combining hamburger meat with a package of mac and cheese. I added some extra cheese and it turned out pretty good, much better than boxed hamburger helper, which is so salty I can't stand to eat it.

I was always skeptical of Hamburger Helper. I tended to make my own homemade version instead, like you.

@GardenGerty I always did because it would take several boxes of HH to fill up my 3 girls, hubby and myself. My oldest daughter was a gymnast and put away more food than a teenage boy would normally consume. Plus my husband and I both grew up in low sodium households with parent(s) with high blood pressure and on low sodium diets, so HH was not pleasant at all for us. Homemade was much better, you could make twice as much for half the price too!

I make a similar dish sometimes, called ''UNstuffed Peppers'' which is really good. I also make stuffed pepper soup. The kids like them both, so it works! Having extra meals in the freezer helps so, so much!

I used to love making different meals with ground beef, However, I have found that when I can afford the frozen rolls of ground beef the meat is not very good, So if I cannot get good ground beef I usually stick to chicken.
