And Luna´s snack dish was full of water. I´m so very glad that she has a good house which we weathered with Anita this winter.
I threw away the water but decided to give Luna something in her normal dog food dish. And as I did not have any special snack, I gave her some dog food which she happily accepted.
Then I went to the kichen to see what Luna´s mom would eat.
I had the chicken breast and I had a small eggplant. So I made a breaded eggplant to have as a snack (or lunch of sorts) while I mylot.
Breaded eggplants are better than any thing in the world.
And to think that my mother never used them! I met eggplants for the first time when I was around 30 years old and my SIL invited me to a moussaka. I almost ate it all! Thinking about it, I must have eaten like a pig.
I already ate all the breaded eggplant but I haven´t yet fried the(or breaded) the chicken breast. But I can eat it later. I´m very happy with my snack.

I love eggplants but have not had any in a long time, Of course, fresh are always better but I might see if there is some frozen eggplant parmigiana I can order,

I have only had fresh ones. O dishes that start with fresh ones and then can be frozen, like moussaka.

@sallypup It is so easy. I cut i in round after I peel it, pass it though a beaten egg and then some bread crumbs. And to the heated oil. Some people use an air fryer but I decided I would not buy one. I eat fried food only once in a while but when I do, I want it to be fried in oil.

I recently watched one of my favorite channels on YouTube, Taco Snacks, make some breaded eggplant in his fryer. He is a messy cook but it looked like it turned out pretty good. How was the breaded chicken?
