Strawberry Shortcake.

There is something undeniably comforting about strawberry shortcake. Maybe it's the way the fresh strawberries mingle with the soft layers of cake together with the whipped cream. This one is covered with strawberry cream ganache, if that is what it's called. You can find inside layers of cakes, strawberries and whipped cream.

That sounds good but our strawberry shortcakes don't look like that. Ours have a layer of sponge cake, a layer of crushed strawberries mixed with sugar and then another sponge cake with another layer of crushed strawberries and sugar. Sometimes people will add a spoonful of whipped cream on top of a serving once it's on your plate or in your bowl.

It is fine if the strawberries are sweet as most of the time they are sour

That sounds so good! It actually reminds me of the strawberry shortcake I had in Baguio from Vizco’s on Session Road. The cake was soft and filled with fresh strawberries and whipped cream—just like you described. I still remember how the strawberries were packed inside, not just on top. It was so comforting and perfectly sweet. Makes me want to go back just for another slice
