Black chicken

I made black chicken broth this Friday. My first time making it. I used the whole chicken (including the head), covered it with lots of water, and added salt. After the pot boiled for about an hour I added scallion, carrot and shiitake mushrooms and let it cook for about 1.5 hours. When time was up I remembered that I forgot to add the ginger so I ended up adding it to the pot, covered it and let it sit.
Tried the broth today and it was more flavorful than when I turned it off after 2.5 hours. I just ate it with the carrot and shiitake mushrooms from the pot and had some of the black chicken. It was really good. I think I will make it again. I may even tried baking a whole black chicken.

I really liked it. I got this chicken at the Chinese supermarket. I wonder why it’s not available in regular supermarkets.

@porwest My mom cut the head off and the feet too but I still cooked them. The feet were really good. Haven’t tried the head yet.

Yes, it has black skin. And the meat is darker.

Surprisingly it seems to be sold only at Asian supermarkets. At least where I live.

My wife told me a week ago that she wanted to prepare a chicken broth. I didn't know about its ingredients. I just said that she will gather the chicken bones and cooks them.

Was the beak still on the chicken Lena.
It actually sounds like something I would eat.
Now you have given me an idea for a future pot of soup.
Did the chicken remain moist?

There were nails on the feet so I gave the chicken a manicure lol by cutting off the nails. The beak was still on the head.

I’d say the chicken meat wasn’t as tender but that’s probably because it was cooking for 2.5 hours after coming to a boil. When I do regular chicken I usually cook it for 1.5 hours to make the broth and the chicken is pretty tender. Maybe cooking the black one so long is why it wasn’t as tender as it could be.

Why cook it with the head on? That doesn't sound good, sorry...
I can see cooking most of the chicken like that but I'd have to remove the head and feet, at least.

@DaddyEvil I’ve never ate a chicken head before but that’s mainly because whenever I bought regular chicken it never had a head on it. I don’t know if it’s meant to be consumed or not.
The chicken feet are delicious. I’ve had them at dim sum restaurants and in chicken soup.

I cut the head off the chicken but I put it in the pot and cooked it with the rest of the stuff. Whether you cook it or discard it I have no idea.
The feet were really good. I did have to cut off the nails though before adding to the pot.

The color of the chicken skin is black. The meat itself is darker as well.
