Adventures in sourdough

So I'm on my 2nd attempt at doing sourdough starter. I originally tried back during the early days of COVID lockdown but didn't pay much attention to details and it was a failure. I recently got a bug up my butt and decided to try it again. I ordered "The Perfect Loaf" baking book which is all about sourdough and here I am on week 2 of maintaining the starter.
The thing about sourdough starter is that you have to "feed" it each day which involves discarding most of what you already have. I could get into the science of it but I won't bore you with it.
After a week though you can start to store the "discard" in the fridge for up to a week to use in other things. It doesn't work as a leavener but it adds a tangy flavor supposedly.
One of my pool buddies was trained as a pastry chef and she asked me about what I've made so far. (narrator: nothing) I did tell her that I had started saving the discard. She said she was really curious about sourdough discard chocolate chip cookies. Well once I heard that then I became curious too.
So I found a recipe online that looks promising. I'm going to head to the pool in a bit but I will try it out later this afternoon after I'm fried. I don't have work to ditch most of the cookies at but I do have to drop something off at the house for my ex so I'll leave him most of them as well. He loves chocolate chip cookies. He loves anything I cook or bake.

I remember reading there's a bakery in San Francisco (Boudin's) that has "mother" (or starter) that dates to 1849 because the owner's wife grabbed a bundle of sourdough in a bucket and ran when the post-Earthquake fires started.
It is an interesting concept, the "mother" or starter in sourdough. I've read about it and I don't understand it, so thanks for sparing us the science.

I've been eating a lot more sourdough bread lately. It's very more-ish! The more you eat, the more you want.
