Time to Start

I just picked up a dozen ear of corn for only $1.88. They looked really good so I actually got 2 dozen. I thought it would be nice to have an ear for supper tomorrow night, and I will freeze the rest of it. I do not think that I have ever started freezing the corn so early in the season, but the price was right, and the weekend is almost here. I will likely get a couple of more dozen on Saturday to do up if they have any left at that price. I picked 2 rip tomatoes this afternoon also. Normally they don't ripen until August, but here we are and it is time to start picking and freezing. Are you putting anything up yet?

I hope to get enough done to last us for the year this weekend. It won't be long before tomatoes are on and we'd like to can some. We only can every other year and this is 'the' year for that.

@snowy22315 They sell tomatoes by the 10 pound case, close towards the end of August, and we plan on buying 2 cases and that should do us for 2 years. I found the snap lids at the dollar store, for a much better price than anywhere else, but I have some wide mouth jars that I didn't get lids for. They are only $4.25 at that store, so will try to find some before they are sold out.

Wow...the fresh corn that is sold by the growers here is usually sold out of trucks, etc...and it's $7 a dozen!! You got a huge bargain. I refuse to pay that amount for it.

I know it is going for a dollar a cob here right from the farm. But, local sweetcorn which is carried by the grocery stores is cheaper and just as good. I found it for a dozen for $1.88 and we'll try it tomorrow and if it is good tasting and sweet, I will get more on the weekend. It takes a while to freeze the corn and bag it, so no need to go overboard tonight.

@MarieCoyle cutting it off of the cob and then freezing it on baking sheets in the deep freezer so that it doesn't clump in the bags takes the longest I find.

@Juliaacv Yes, it does. Cutting it off, bagging it up, etc. is time consuming, I know that firsthand. Years ago, all of the grandparents canned tons of corn. I will eat that, of course, but fresh corn that's cut off and frozen is just delicious, it's better than canned.

It was a great price. I blanche the corn on the cob, then cut it off and freeze it on baking sheets and then transfer it over to freezer bags after it has frozen.

That corn looks really good. I love corn on the cob year round but summer seems to be extra good. Do you freeze your corn already cooked or do you freeze it as is? I never thought about freezing fresh corn but it sounds like a great idea.

@Marilynda1225 You and your daughters could do up alot if you all gathered together and worked on it. You could all take a duty, husking, taking the hot cobs out of the water, cutting the corn off of the cob and moving it to the baking sheet. I love work bees.

It was delicious corn, sweet as candy. I blanche the sweet corn, let it cool and then cut it off of the cob and put it out on baking sheets to freeze without it being in a clump and once its frozen I scoop it into freezer bags. I froze 1 dozen and 9 cobs today, it made up almost 3 full large freezer bags. I always get complimented on the corn, during the cold months you can really tell that it is sweet corn. I try to freeze corn and squash and can tomatoes.

@Juliaacv that sounds easy enough and I love the idea of having it for the winter months. We love corn but anything I can buy frozen certainly isn't as good as sweet summer corn. I'm going to see if I can find some sweet corn on the cob when I shop this weekend

I did the 2 dozen today, and we will have 3 cobs for supper, 1 for me and 2 for my hubs. I tasted a few kernels earlier, and they are so sweet and large in size.

That's a great deal! That's OK to freeze them and I don't think the taste will be different after you cook them.

When the price is right that is the time to buy and freeze store. Hope you get more of those when you get there again Those tomatoes you are talking about are they from your plants?

Yes, the tomatoes are from our own plants. I had to pick them, they had blossom end rot on them, so the bottom, which we do not eat anyways, is not 'good' on these 2.

The corn looks and sound delicious I just have canned corn. I have not found a good tomato in a long time, I miss the ones we grew in Latvia, I use canned tomatoes,

I froze 1 dozen and 9 cobs today, and will pick up some more to freeze tomorrow morning. I'd like to get it all done and put away this weekend. There is a grocery store that sells tomatoes by the 10 pound case, they usually care then in late August and I will get 2 cases to freeze. I have the canning jars all gathered and ready, I only have to get a package of the wide mouth snap lids, I got the small mouth ones, and there aren't alot of the larger ones, but I should have them on hand just in case.

I was very happy with the price and the quality of the corn. I will put the 2 dozen away later today, I may buy some more tomorrow to do some more.

Yes, I plan on getting all of the corn that I will need over the course of the next year put away in the freezer. It won't be long before tomatoes come on and we will can some.
