Braised Pork Is What's for Dinner Tonight

Braised pork steaks. Or in this case, braised pork butt steaks, which are a very similar cut, and only slightly different than an actual pork steak. But it's what's for dinner tonight, and if you have followed me long enough, you are well aware this is a common staple dinner in our house. We love pork enough anyway, that anytime we drive past a pig farm, all the pigs run and hide. Probably a wise decision, if you ask me. I seasoned the pork butt steaks with some Worcestershire sauce, garlic powder and onion powder, and some B&D Meat's special seasoning blend which is very good. Let that marinate for about 15 minutes, then brown the steaks for 3 minutes on each side. Prepare a "braise mixture." This time I am using an "empty" jar of teriyaki sauce and mixing it with some broth. Shake it up to get all the bits, and then incorporate that with the meat, lower the heat and simmer for about an hour. It comes out like butter. We will have it with some baked beans and buttered cut green beans. This is definitely in the order of good eats, and I am looking very forward to it, especially considering we haven't had braised pork steaks in a while. I've been trying to cut down a bit on it due to a slightly elevated cholesterol level on my last visit to the cardiologist. What's going on your dinner table tonight? P.S. The picture is the pork right when the braise starts after browning. It's not even close to done.

I just woke up from my afternoon nap. I ate a small serving of cottage cheese, a large plum and some leftover rotini pasta with sausage and hamburger cooked with it. Delicious! Your pork looks really good, too. Do you ever add Dijon mustard to the water before you add the pork to it? That adds a nice flavor, too. (I don't like mustard normally, but cooking it into meats doesn't taste like adding mustard to already cooked meats.)

@porwest I agree, if I don't change the mix I use when cooking something, Pretty might taste it and then decide she doesn't want it. While that leaves more for me, she gets cranky if it happens too often. *shrug* When she refuses to eat something I've cooked, I tell her she knows how to cook if she gets hungry.

@DaddyEvil That's how it generally goes in my house. My wife eats what I put in front of her. Granted, I do "tailor" meals, but neither of us are picky about food at all.

In fact, I have added Dijon mustard to the braise before and you're right, it does add a nice touch. 100%. When it comes to the braise mixtures, I use a wide variety of combinations of things. We eat braised pork enough that you do have to change it up to make every dish a little bit different.

Nothing went on my dinner table because I’m not home. However, I had a wonderful lunch of a smoked chicken sandwich and smoked chicken-stuffed baked potato for lunch, and it was of course way too much…so I had the leftovers for dinner.

@FourWalls Sounds like a place that would appeal to me. Speaking of Route 66, I saw on our Metro East Crime FB page that Erik Estrada strolled into a Collinsville Denny's, which is along Route 66 on Highway 159. Collinsville is about 10 miles from me.

Pork steaks sound good. We have that sometimes ….The Mister likes lots of gravy . Tonight Mom and I had gammon, boiled and simmered til oh so tender…..we had creamy mash, with grated cheese and leeks. To follow we had Salted Caramel ice cream.

Pork steaks are a funny thing around here in the States. It's a Midwestern thing for sure. If you mention a pork steak on the East Coast, for example, people look at you like you have four heads. But it's a very good cut of pork and very versatile. It's my favorite cut. I like gravy too, but usually don't use any on a pork steak. Pork chops are another story. They can be quite dry, so gravy is a good idea.

I'd rather have Lee's Famous or Popeye's personally. But I tend to get KFC when I have fried chicken because it's basically right down the street...and I don't mind it.

Leftovers are always good too. We have nights when we have to knock 'em down a bit when things start to accumulate. I never have a complaint about eating them.
