Late Dinner Tonight

We just finished out dinner for tonight. My grandson and I planned on cooking chicken breasts for dinner with veggies and to have it done around half time of the LSU - Clemson football game. LSU pulled off the win, btw!! So excited about that.
My grandson has just recently perfected cooking on the grill so he decided to throw these on the grill after we delayed dinner past half time of the game. He said he wasn't really hungry, so we waited until the game was over.
I have fixed some crowder peas earlier and figured that it would not be something he would eat. So I let him pick the other vegetable. He chose potatoes and sliced them up and seasoned them very well--in fact too well. He loves spices and will blend 2-4 seasonings or seasoning blends together. Tonight he got too much red pepper even for his liking. It was a bit funny when he didn't finish his potatoes and started putting them up for tomorrow. I told him he could add the rest of mine to the container since they also had a ton of salt on them.
Overall, a fun evening and dinner with my oldest grandchild! Great memories for later to look back on and have a little laugh about.

It's easy to accidentally get too much spice on potatoes. It's also easy enough to use those potatoes in something else, too. Tell him tomorrow to use some type of soup and pour over the potatoes. (I like using Cheddar cheese soup for something like this.)
I wasn't very hungry last night so just made a Hot Pocket for my dinner.

@kareng Pretty isn't much for leftovers, either. But making the potatoes into something new isn't leftovers anymore.

You really had a good time with your oldest grandchild. It's always great to meet our near and dear ones who live far away and can rarely come.
I had a simple dinner as usual . Rice, lentils, green vegetables and a glass of cow milk with honey.

I'm glad you got to spend time with you grandson...and LSU won! I had some chicken egg rolls. I'm using up what is in the freezer that I/my husband bought.

Sounds like a lot of fun and certainly fodder for future convos. lol. We went to Perryville yesterday, a town about an hour and a half away, and stopped at a place called Stonies, which makes about 30 varieties of bratwurst and got a few packages and cooked up the garlic Parmesan ones we got and had a salad on the side.

I don't add very much to potatoes. They are good by themselves. But anything someone else cooks is good.
We had potatoes and meatballs in a white sauce.

I just had some hashbrowns for dinner last night, with a simple salad on the sideājust cabbage, carrots, cucumber, a bit of mayo and ketchup, some salt and pepper, and a little cheese mixed in.
