I have known for awhile that are some eggs that are naturally pastel or olive in color, but did you know some hen's eggs were bright blue like Robin's eggs? Azur hens produce blue eggs with blue even on what would be the white on the egg. These eggs can be purchased at Whole Foods sold under the brand-name Heirloom Farms. I haven't been to Whole Foods in forever, but maybe I will check it out the next time I go to the city and come home with some blues.

They might be originally French because they have the name Azur.

I did not know about this specific blue egg. I know other breeds lay greens and pinks and blues, but never have I seen one with color in the whites. Let us know how you like them.
