Sweet chestnut bonanza!

It really is a bumper year for chestnuts! Not only are there lots but they are a decent size as well, some years they are so small they are hardly worth the trouble of getting them out of their shells. In the past we’ve picked up a few and enjoyed them roasted. Last year we collected rather more and we cooked the extras and stored them in the freezer to use in savoury recipes. None of the rest of my family like mushrooms so we often use chestnuts instead, they make a good substitute in things like stews and breads. I have used chestnut puree in desserts before as well, but that was using shop-bought puree. This time though I think I might be making my own, I have such a heap here! @LadyDuck has given me some good ideas. Does anyone have a favourite chestnut recipe to share? No, chestnuts are not easy to come by here due to the chestnut blight in the 1800's that killed so many.

@Fleura We had a gypsy moth epidemic in the 70's that killed a variety of trees.

Oh that's a shame. Tree diseases have such an impact; our landscape is forever changed due to Dutch elm disease in the 1970s and now we have ash dieback

They are quite expensive to buy here too, so free ones are even more of a bonus!

That's interesting that you sometimes use chestnuts instead of mushrooms.

We make a very tasty courgette and mushroom bread using chestnuts instead.

@Fleura It's good to have two ingredients that you can more or less easily swap.

@fleura Oh dear, now you’ve propelled me back to Paris in November, walking among the chestnut roasters in the square at Beaubourg, the edgy whiff of weed in the cold air competing with the sweet roastiness of the chestnuts and the heat from the braziers on my cold, pinched cheeks.

Roasted chestnuts are the best. I've heard some people using chestnuts in a creamy soup or something like a risotto.
