Spices You Actually Finish Before They Expire?

Be honest: which jars do you actually use up before they go stale, and what do you cook that makes them disappear? Or do you just carry on using them anyway?

I never use up all my spices. My salt is always the most used, and, of course, I use it past the stated expiration date. Cinnamon is my second most used; I love sprinkling cinnamon on oranges.

There are spices that I use more than others, the jars that I use well before they go stale are paprika, turmeric, curry, cinnamon, black pepper, cardamom. Well I do not believe I have jars of expired spices.

I just use them anyway, no matter how long I have kept them. I think it's a farce that they go bad. Maybe they lose some potency and you use a little more. But I have never found any difference really.
