Some time back we enjoyed prawns encased in kafaiti pastry. There’s a name for them that I’ll hopefully remember before I end this. Kafaiti pastry comes frozen – well, ours did – so you have to let it thaw thoroughly. Then you have to tease the hair-like threads apart before wrapping the prawns in the pastry. You also have to squeeze out all the moisture before deep-frying them. Vince decided he wanted to make some which he did the other day. They’re a bit tricky to make, a bit fiddly but not all that difficult. We invited friends down to share these with us as nibbles with drinks, then we had pizza and played cards so it was a fun evening. We forgot to take a photo but ours didn’t look much different to the picture on the packet. They taste as good as they look.

Oh, I'm sorry they tasted bad after all that work. (I'm teasing, of course. Just because I can't eat shrimp doesn't mean others shouldn't eat them. ) I'm glad you had a nice get-together with your friends.

We needed a couple of guinea pigs to try out our concoction. They happened to be it but they were very happy about it.

Kafaiti pastry is shredded phyllo, I liked the prawns wrapped in it, you really have to pat dry the shrimps very well to be sure all the moisture is out. I would have loved to taste yours.

@JudyEv - I also like shrimps breaded with a mix of breadcrumbs and coconut flakes. It's necessary to be sure they are fully dry, because they have to be deep fried.

Yes, that's right. Vince would pat dry the shrimps then squeeze out more moisture when he put the pastry round the shrimp. They were fiddly to do but tasted very yummy.

I have never heard of that kind of pastry. I wouldn't want to actually try making it! Sounds like a fun evening all round
