The next Baking Club project

I keep asking the members on our Google Classroom what they are interested in doing. I'm really not even supposed to be doing that--they are supposed to be planning things on their own but that hasn't happened with this group. Anyway it is kind of a 50/50 split on actually cooking/baking and decorating. 2 weeks ago we made homemade cinnamon rolls from scratch over the course of 2 days.
Our meetings are normally every other Monday but we have off for Presidents Day so we are meeting this Tuesday. They will be decorating cupcakes. I had originally planned Valentine's Day decorating but then realized that Tuesday is *after* the day. I asked the group who showed up for the yearbook pictures if they still wanted that theme or if they wanted to do something else. They still want Valentine's Day so that's what we are going with.
I will make the cupcakes (both chocolate and vanilla) here on Monday. I ordered a bunch of different decorating items as well as icing and boxed cake mix. I have muffin liners, plates, napkins, plastic knives, and cleaning spray already. I've been reimbursed for eggs for the Thanksgiving turkey cupcakes so I'm just going to use the ones that I have here already. I'm waiting on a final count but it looks like about 20 students are planning to attend.
So that's the plan for Tuesday. Then we have a bake sale before school on Friday. Not sure what we will do for the next actual baking project. I'm thinking either soft pretzels or pizza. I'll think about that after the bake sale.

I'd have to do the dough like during my lunch so it doesn't over proof. Just don't want to be there for well over an hour after school. Kind of defeats the purpose of teaching them "baking" but I'll still share the recipe for the dough with them so they can do it on their own at home. But they can pick their toppings, assemble, bake, and eat everything.

@NJChicaa Making the dough for homemade pizza is what Pretty hates the most about making it. When she can, she talks me into making the dough and rolling it out. Then she's happy enough adding sauce and toppings.
Pretty refuses to even watch me making bread dough or helping me make rolls with the dough but she definitely will help me eat the rolls once they're out of the oven.
You could also make dessert pizzas some time using canned pie (fruit) mixes. Those always turn out delicious. And they're easy enough to do.

What's easiest for you to do? That's what I'd suggest for the next baking project if they don't care enough to make suggestions.
Have any of them volunteered to bring something for the bake sale?

The pretzels or the pizza sound like fun. Maybe the pretzels would be easier?
