First batch of biscuits are in the oven

One of the things I'm bringing for tomorrow's bake sale is biscuits filled with scrambled eggs and cheese. The members have been bringing all sweet stuff but I thought it would be good to try something savory and more "breakfast" since we start selling at 6:45am. The biscuit recipe is from the Cook's Illustrated cookbook and is for "easy buttermilk drop biscuits". It isn't a traditional recipe that most Southerners use but it is indeed easy and they are pretty good. I'm going to make the eggs, assemble the sandwiches, and wrap them tonight. Then I'll heat them in the oven tomorrow so they are nice and hot (or at least warm) for first thing. I have some bacon in the fridge so I'm considering doing some of them with that too. The plain ones will be $2 and if I do the bacon ones they will be $3. Stay tuned!
I get the Cook's Illustrated newsletter a while ago and these biscuits were in there.  I knew I was going to make them soon, and I did....

Biscuits filled with eggs and cheese? Is that anything like a quiche? I love a quiche Lorraine, so the addition of bacon would suit me just fine.

American biscuits--like rolls not the UK version of what we call cookies. I will make the eggs, top with cheese, and fill the split biscuits with them.

@NJChicaa I think our equivalent is called a scone? Usually cheese as the savoury version, and fruit the sweet version. I’m sure yours will be delicious.

I hope they're easy to assemble. Adding bacon to some of them sounds good, too. I'm sure they'll sell well for you.
