Do you like Mexican corn?

I love Mexican corn. I use my mom’s recipe, but I don’t think anyone’s recipe differs much. It’s corn with cream cheese, butter, jalapeños (if you want) and garlic. I don’t make it really with jalapeños. Do you like it? Have you tried it?

One of my granddaughters likes to make it and it is good. I haven't made it here but your way sounds delicious.

We have a friend who was born in Mexico and she does the corn in mayo, parmesean cheese and tajin and its so good.

I like making it when the fresh sweet corn is in season. I use regular bell peppers as I can’t eat hot peppers. And of course chopped onions,and butter and seasonings. I have had it made with cream cheese but the kids want it without. I love it, so good!!
