Ice Pops.

To beat the heat, I had an ice pop today, a cold treat that reminds me of a popsicle but with the fresh taste of coconut. Since I do not have fresh coconut at hand, I made use of what I have. It is actually a popsicle Filipino style.
It was so refreshing, especially on a warm day. I made it for myself, which made it even more satisfying to enjoy. I made different flavors that I can find here at home, strawberry, Milo and Kool-Aid juice. Simple desserts like this can really brighten the mood. Sometimes the best snacks are the classic and affordable ones.

We have some of the ice pop plastics that I can freeze after filling with juice or Kool-Aid. I quit using them because they're hard to clean. I buy pop-ice most of the time.

They sell coconut ice pops here, and they are so good. I love any kind of frozen confection really. So good when its hot.

I actually have popsicles in my freezer but store-bought. My favorite flavor is the pineapple coconut. I haven't made my own popsicles since my kids were young but I do enjoy a good popsicle especially when the weather is hot.
