Reubens Tonight

First off, let me take a moment aside to wish all the mom's here on myLot a very happy Mother's Day. Kick your feet up, take a load off, and let the men and kiddies take over the day's needs. This is your day and you've earned it. Soak it in and savor it for all it's worth.
Speaking of Mother's Day, my sister and I had discussed taking mom out for dinner tonight. But last minute I thought, hey, I've got a couple of corned beef briskets I bought on sale a while back in the freezer. Why don't we just stay in and make Reubens.
With the cost of eating out, these days, this is a massive saver. I figure, with 7 of us, the total cost of eating out would probably run us around $252 with tip, and that's a low-end estimate. It would probably be much higher considering a few beers and cocktails.
So, here's the breakdown of our Mother's Day dinner tonight:
6 pounds of corned beef, $13.14
Beefsteak hearty rye bread, $4.98
Thousand Island dressing, $2.00
Swiss cheese, $3.47
Sauerkraut, $2.98
Potato salad, $5.97
Serbian salad fixings, $4.00
Muffins, $10.00
Potato chips, $2.50
French onion dip, $1.88
Beer and other beverages, $23.00
Total? $73.92
It will also be more fun and personal because we will be at our place for this, so we can spend more time chatting it up and not be rushed. It's a bit more prep and time involved getting the house ready for guests. But it's worth it.

Thanks for the well wishes. My son is coming down and will do work for me. We will have Subway, and hopefully din at a nearby Mexican place. I am going to make a Reben casserole this week.

I went to church, which I would have anyway. Other than that not a thing. I need to make a Reuben casserole. I do not blame you for making your own, they are usually better anyway.
