Delicious Casserole

Mostly for cottage cheese lovers, but I think anyone would enjoy this. I do it simply by eye as they say. I take 4 to 6 eggs depending on how much I want to make. I whip up the eggs, and then I add from a half cup to a whole cup of cottage cheese and blend it in after mixing in shredded cheddar cheese. This is where it gets interesting. Then I add whatever I enjoy at times, slices of smoked sausage or kielbasa, and at times drained spinach from a can. My latest experiment came today when I made a whole baking dish full, and after pouring the casserole into the baking pan, I added hot dog chili sauce on top and swirled it in. Then I put it into my toaster oven at 375 for 45 minutes. Now I ate today, and I have enough to heat up tomorrow.

I don't love cottage cheese, but it is protein packed and is milk so it is one darn healthy food. As a matter of fact I think I will get some next time shopping. I used to make an egg frittata with spinach and ricotta but I think cottage cheese would work in that too.

@snowy22315 never thought about ricotta. I don't know if this would work with that but you could try it just have some cottage cheese on hand too.

@DianneN it is something you can create any way as long as you keep the basic ingredients of eggs, cottage cheese, and shredded cheddar.
