A sponge but what's the other thing?

I seem to have been on the go all day today which is unlike me. We’ve invited a couple for morning tea tomorrow so there has been a bit of extra cleaning, etc, to do. I made cheese straws and you can see Vince’s baking efforts in the photo. He thought he’d make a sponge but we looked at it too soon and it sunk in the middle. You can’t really tell because it’s upside down on the rack. It’s going to be a great dessert with custard though. Can you guess what is rolled up in the cloth? Of course you can. It’s another try at making a Swiss roll. When the sponge flopped, Vince decided he’d make a Swiss roll rather than try another sponge. Once it’s fully cold, we’ll carefully unroll it and fill it with cream before rolling it up again. The cake is much thinner this time so hopefully we’ll be able to roll it up successfully. We’re going to cut up strawberries and put them in the cream. It would be good if you could wish us luck.

That is often the problem with the sponge cake, it sunk in the middle. Usually this happens because it has been under baked. Never open the oven while it's baking. It's easy to see if it's well baked because it detaches from the mold. Once it's baked, turn off the oven, open the door just a little and place a wooden spoon to keep the door slightly open. Wait 5 minutes and take the cake out.

@JudyEv If it was browning too much, it is possible that the oven was too warm. The sponge cake is not difficult to make, but baking is critical.

@LadyDuck We always put the temperature very slightly lower on our oven as it does seem to cook too quickly.

Thanks very much for the hints. It seemed to be browning a bit much so we opened the door to test it but it wasn't cooked. I'll remember your tips next time. I'm sure there'll be a next time.

The sponge cake that sank in the middle could still be used with different fruits (strawberries and blueberries with sugar) crushed up and poured into the dip in the cake. (I suggested those fruits because they go well together and are both ripe around the same time.) Uhm... don't you have a window into your oven from the outside with a light inside you can turn on to look at baking foods without opening the oven door? That's standard on ovens in the US. I'm glad the swiss roll turned out perfect!

Yes, we can see into the oven but it's still a bit hard to tell if it's cooked or not. It was quite brown on the top so we thought it might have been done.

Oh brilliant I hope it turns out well when you unroll it & re roll it. I have only ever made it once & although it turned out well it is too much flaffing about for me! Enjoy your tea & cakes.
