We have all of the ingredients needed to make it. Well we don't have cake flour but I found a way to substitute all-purpose flour and corn starch for it. It is crazy how full the cabinets are when we are provided 3 meals a day except for on the weekends. Saturday night and Sunday breakfast and lunch are our responsibility. Everything else is made for us. It is easy enough to make. I think the ladies will like it with their afternoon coffee. We shall see.

Yes but there is always a salad bar or fruit and yogurt as alternatives

Oh, yum. I love almost anything lemon flavored. I am sure they will like it! I recall yesterday you saying there was dried cranberries in the cabinet there. It made me start thinking that one of my daughter's favorite cookies is homemade oatmeal with cranberries and nuts...hmmm...
