It's My Turn To Be The Chef Today

Happy Wednesday Everyone! the sun is shining and it's not quite as hot and humid this morning. Still feels like summer but the humidity has dropped a bit.
Tonight is one of my favorite dinners (eggplant parm with spaghetti).
I make my marinara sauce in the crockpot so I don't have to stand at the stove and stir it.
5 large cans of crushed tomatoes and I can open them faster with my hand held can opener than my battery operated one. The battery operated one is slow and does a decent job but I can do double by hand myself. So, I play a game and see how many cans I can open while the battery one is slowly going round.
Today I made it to 2 1/2 by the time the battery one did one. I'm a champ!!
Later this afternoon I'll lightly bread the eggplant cutlets and bake them in the air fryer.
I love my modern conveniences
My days of slaving over a hot stove are over but I can still whip up a really good dinner.

That sounds delicious.
So, all you use is the 5 cans of tomatoes for your sauce?
I will have to try that, I currently buy my marinara, but I have dozens of jars of canned tomatoes that I could use.
I'm chef today too, but I am not cooking. I will put everything out for wraps, deli meats and cheeses, pickles fresh vegetables, condiments and the wraps and we can build our own and then warm them in the microwave if necessary.
We'll have a handful of potato chips on the side with a pickle.

I use 5 cans of crushed tomatoes, garlic powder, onion powder and basil. Easy and delicious without a bunch of additives

I bet it will be wonderful. I am planning to make that Eggplant recipe I posted about this weekend. It should be scrumptious.

It certainly sounds mighty tasty! I’m also glad to hear you aren’t dealing with as bad of humidity than you had been dealing with.
