Butternut squash is a success …… / myLot

After keeping a butternut squash for best part of a year , I finally made soup with it today …. I wasn’t even sure that it would be okay to eat …. I cut into it and only dared to peep with one eye to see what it was like inside ….. Needn’t have worried. It was perfectly fine. So it was chopped and roasted in the air fryer ….the first time I have used the roast function. In a pan i sautéed chopped onions with garlic powder and chillies Added the butternut squash and stock. Mixed well and added cream Blended Returned to the pan to heat. Served with crusty bread. Oh my, it was delicious…..and there are two portions left. One for tomorrow and one for the freezer. Next time I will use the soup maker ….its a lot less faffing about. What’s your favourite soup ?

Your soup sounds really good and I do enjoy butternut squash. Our local Sams Club has butternut squash ravioli which are delicious but only sold during the Fall and Winter months. My favorite soup is pea soup with bits of ham. But, I do like most soups and will be making some as the weather gets colder.

@Traceyjayne the ravioli is scrumptious and I can't wait for it to be back. I've never tried making my own but maybe I should?

@Marilynda1225 oh yes, give it a go. I’ve not made pasta ever but I do love eating it. I gave had ravioli sometimes when we eat out. Never had butternut squash ravioli though ….was there a sauce with it ?
