Tordelli alla lucchese is what I ate this evening in a trattoria on the Borgo Stretto in Pisa. Similar to ravioli, tordelli is stuffed with beef or pork, Swiss chard, pine nuts, raisins, bread, spices, and grated cheese. In Lucca, the tordelli are semi-circular in shape (mine were square this evening), and once prepared, they are combined with a rich and hearty meat sauce made with onions, carrots, celery, beef, pork, garlic, pancetta, sage, cinnamon, nutmeg, red wine, tomatoes, and olive oil. I thoroughly enjoyed my meal and had panna cotta alla fragola for afters.
