A light dinner.

Today, at lunchtime, I had Martín as a visitor. I cooked a delicious tomato sauce but instead of making and adding homemade meatbals, I bought the ones they sell at the supermarket. I wanted to try them because it is so easy to just place the raw balls into the sauce. It was the first and last time I´ll buy them. Later on, when I read the ingredients from the package, I discovered why mine are better. I add eggs, bread crumbs and caramelized onion. Anyway, the sauce was delicious with my favorite pasta. And there was a little bit of pasta left so I decided to have a pasta omelette for dinner. When young visitors come and do the dishes, they never wash pots and pans. So the remaining sauce was in the pot I used to cook it and the rest of the pasta was in the strainer that Martín used to take it out of the pan. When I went to the kitchen I placed the remaining sauce in a Tupperware and in the fridge but used the leftovers to add to the pasta. I beat a couple of eggs, added the pasta, some diced cheese and a bit of diced onion. With that I made the most wonderful omelette. I have found that many times the food we make from leftovers is better than the dish we cooked in the first place. In this case, the omelette was better because it had the taste of the sauce but not the bought meatballs. Do you like leftovers?

I also tried those ready made meatballs and I did not like at all. I will continue to make them myself. I always eat leftovers, I never throw food.

I do not care for those store bought frozen meatballs, either. They are not very good at all, no matter what brand they are. Your dinner sounds good, I am always glad when we have something to reheat and eat. If we don't eat our leftovers, I freeze them for later.

Yeah I love leftovers, sometimes they taste even better the next day. That pasta omelette sounds so good honestly, way better idea than just reheating it plain. And lesson learned on the store bought meatballs lol, homemade always wins.
