This week's Baking Club project: Apple Pie Cake Truffles

They wanted cake pops. Well we can add sticks to the truffles to make them cake pops. Students sent me a ton of ideas but they were all on Pinterest so I couldn't see the actual recipes. I do have Christina Tosi's "All About Cake" baking book though so I went through that.
I need to order the ingredients tonight. Some of the seniors said they can't do Monday meetings so we are going to do them on Wednesday. I will bake the cake and do the pie crumbs here. I'll probably make the apple compote too so all they will have to do is just set up an assembly line to make the truffles/pops.
In a perfect world I'd have them doing it all but even just baking cake can take an hour let alone the rest of the stuff. I'm not trying to live at school. I try to make things simple enough that they can be in and out in 30 minutes.
I don't even know why I do this to myself. It isn't like I'm making bank for the effort. Still the students enjoy it and that is the point. There has been a big push on joining clubs the past 2 years.

You're still doing it out of passion NJ.
Your passion is baking, but also teaching and the common ground that you've established with so many students over the years of doing baking club has to be so therapeutic. These are skills and memories that they will long carry with them. My best friend was in my grade 9 home economics class, she kept the recipes that we got, I did not, but remember how to make some of the basics. She will make a reference to home ec class and some of the antics that we used to put our teacher through.

You are making a difference whether you know it or not. Some of these kids may have never even had a homemade dessert or saw one being made, or helped make one. Many of today's kids think that all goodies come ready made and pre-wrapped at a store. It does sound like they really enjoy it a lot.
