Wednesday ( A Busy Day )

Happy Wednesday Everyone! looks like a decent day ahead weather-wise. A bit warmer so I'm back to short sleeves and glad it's not humid.
Yesterday turned out to be busy so although I was here chatting for a bit I didn't have time to write a discussion, It's fine, I really didn't have much to talk about anyway.,
Today I have a lot to do. We're having eggplant parmesan for dinner with spaghetti so I have to get the sauce cooking and then bread the eggplant to bake in the air fryer later.
Tomorrow is my oldest daughters birthday and we'll be having a girls day to celebrate. My youngest daughter took off from work so we'll be going out for lunch, shopping and whatever else they decide.
My kitchen will be getting a lot of use today as I also want to make red velvet cupcakes. Red velvet is her favorite so instead of a whole cake I figured cupcakes would be nice.
I thought I had a nice gift bag for her gift but can't find it. Don't know what the heck I did with it so if I can't find it guess I'll have to go the old fashioned route and wrap it. I used to love to wrap gifts but not so much anymore.
Aside from kitchen duty my day is basically routine.
I'm trying to relax a little, enjoy my coffee and catch up here before tackling everything that has to get done.

Sounds like a full day and happy plans for tomorrow. A girl's day would be so fun! Enjoy, and I hope your girl has a wonderful day!

Oh, she’s going to love the red velvet cupcakes! Yum. 
I’ve always wanted to try eggplant Parmesan, but haven’t seen never had the chance.
I was supposed to go to the post office, but it was pouring rain, and the box is large. I’d never get it to the car if I went now. I’m not going to complain though since we finally broke the drought.

Guess you'll be holding off and not trying to manage a large box to the post office. Good to hear the drought is over.
I think you gave me the idea of making cupcakes instead of a cake

Yes, that's so very true @Marilynda1225 Plus, here in the desert as soon as it rains the weeds begin to grow, some in my back yard are already 3 ft tall, I'll be getting plenty of exercise once Hurricane Polo finally dissipates ..... I hate when there's a hurricane on the pacific ocean cuz it causes way too much flooding in desert areas that usually doesn't get very much rain like here in El Paso.

@Marilynda1225 Nah, I went to an all day breakfast kind of place, so I still had breakfast. They did have some interesting lunch items though. I will have to show up there sometime for one of those.

I also have a bunch of gift bags that I recycle and they do come in handy. I used to enjoy wrapping gifts and making them all pretty but these days I'm happy enough to use a gift bag.

Im looking forward to tomorrow and celebrating my daughters birthday. I did find the gift bag and now I can relax.
The cupcakes are in the oven and they smell so good. I might have to sneak one before tomorrow
