Hello everyone. I hope your day is going well. It is 61 degrees F and sunny here at the Jersey Shore. It is a bit too cold to have the top down on the convertible. Work was fine today. I finished off the notes as planned and got the students working on their own. They will be doing that tomorrow too. I tried to catch up with the principal today because he wanted to talk to me about a student but I never managed to cross paths with him. I don't know what the mother's problem is--the kid has a 79 C+. He is 1 point away from a B. I'm back at the apartment with the cat crew. I will be very busy prepping for tomorrow's Baking Club project: Apple Pie Cake Truffles. I am going to make the cakes, the apple compote, and the pie crust sand. Tomorrow the students will break up the cakes, combine the crumbs with the compote, form the truffles, roll them in melted white chocolate, and then roll them in the pie crust sand. They need to sit in the fridge for like 5 minutes and then they will be ready to go. Of course I can't do something simple with them like brownies or cupcakes. Soooooo I will be busy this afternoon and evening. For now I'm sitting down and catching up on the news and InternetLand while the butter softens on the counter. Can't do anything with it yet. Oh and a coworker who has a mini-farm heard on the announcements that we were doing apple pie something. She brought in a TON of apples--way more than I can use. I'm going to have to start looking for some more apple recipes. What's everyone else up to this afternoon?

Free apples, not bad! And, I think it’s great you’re not going same ‘ol’ same ‘ol with baking projects. It keeps the projects interesting for the students. They won’t get bored.

I'm trying to encourage them to start coming up with their own ideas for what they want to do. They are pretty much supposed to be running the club.

Are you having another bake sale soon? It’s Apple season, pies, cakes, cobblers. So good. The cake pops sound delicious but a ton of work for you.

That's nice to get apples for free. There must be dozens of apple recipes you can use.

Those apple pie cake truffles sound amazing, your students are lucky. Funny that a coworker just showed up with a ton of apples, so now you have to bake more. Im just relaxing today, nothing as fun as yours.
