Apples apples apples

I think I mentioned the other day that a guidance counselor who has a mini-farm a few minutes away sent me a bag loaded with red apples from a tree in her yard. She also gives me duck and chicken eggs when they are laying. She had heard on the announcements that the Baking Club was making apple pie cake truffles. Well even doubling the recipe I only needed 2 apples. I have about 20 more to figure out something to do with. If I'm eating an apple it is going to be a Granny Smith. I like the tartness. These are some kind of red apple which is not my jam (no pun intended). I will make some applesauce. I like to make it chunky and make yogurt parfaits in small mason jars for a grab and go breakfast. (I top with some granola too) I have a bag of pectin left over from making the apple compote so I might try making some kind of apple jam. I probably should make some kind of apple dessert to bring into work too--maybe hand pies. Oh well it is a 3 day weekend so I will have plenty of time to figure something out.

YUM! I love apple everything! Unfortunately, we have a ton of yellow peaches I'm trying to use up right now. I can eat a couple of them every day but more than that makes my blood sugar shoot sky high. I eat one in the morning and one in the late afternoon. If we lived a little closer, I'd see if you wanted to trade some apples for peaches.

@NJChicaa Peaches are my favorite fruit. When I was a young adult, I'd buy a bushel at a time and eat them instead of regular meals then go buy another bushel until the peach season was over.

Those apple parfaits in mason jars sound like such an easy grab and go breakfast, I might steal that idea. Hand pies are a great call too, people at work will probably love them. Enjoy the long weekend and have fun figuring out what to do with all those apples.

The chunky apple sauce is a nice sweet contrast to the Greek yogurt. I do applesauce, yogurt, and apple sauce. When I'm about to eat it I sprinkle on the granola. It is a good breakfast.
