Hello everyone. I hope your day is off to a good start. It is 55 degrees F and dark here at the Jersey Shore at 2:20am. The high for today is 73 which means it will be top down weather again this afternoon.
I went to bed very early so here I am awake at an absurd hour. I never got around to doing the baking I needed to do last night so I'm doing it now. I have coconut muffins in the oven and next up is banana bread.
Oh well. Whatever. The students are working independently today so I just have to keep the coffee flowing when I get to work.
I need to place an order for some groceries (not much) and that's about it for the afternoon. I need to clean some carpet but I may push that off until tomorrow.
What's everyone else up to today?

I wish there was a way you could message me a coconut muffin! They do sound so good. I imagine they will be sold very quickly, along with the banana bread.
Yes ma'am, keep that coffee going.

The recipe is from the Bravetart baking book written by Stella Parks. She is amazing but what one of the things I really like about the book is that she includes lots of ways to adapt recipes for different flavors, add-ins, etc. The first recipe I used was for her "top shelf muffin mix" which is something that you can make with coconut oil and store in the cabinet for as long as the coconut oil is good. That way you can use her "5 minute muffins" recipe to just whip it out, add milk/eggs/extract, stir, and mix.
She has variations on most of her recipes to change the flavor profile. It is a great book. She used to write for the Serious Eats web site. That's how I first discovered her.

I will definitely look in to this, as I am loving the adapting idea, which of course I often do in my cooking and baking. Thanks for the tip!
