You could do cheese-stuffed meatballs. They are always a good option.
Lasagna would also be a good choice. You can freeze part of it.

As others have said make some into meal loaves and freeze them I also cook some for things like chili and spaghetti or hamburger helper (I make my own) and just hamburger patties and freeze them. Then you can take out what you need thaw it out and cook as desired. I do thins all the time and it save time and is always ready for what ever I need it for.

You could make chili and freeze it, spaghetti sauce or meatballs and freeze it or make into hamburger patties for grilling later and freeze them. This will give you some quick meals for those hurried days later when you don't have time to cook a full meal!

Spaghetti. Or Man Casserole:
2lbs hamburger
3 cans tomato soup
3 cans cut green beans
Instant mashed taters
american cheese slices
French's Fried onions
Rectangle casserole dish
Cook the hamburger meat, like you were making spaghetti sauce, use some salt and pepper
Cook the green beans seperately, however you usually do it, I use microwave for 3 minutes.
Make 6-8 servings of the instant mashed taters seperately. You can use real taters for this step too.
Mix the green beans, cooked hamburger and tomato soup together in skillet and let simmer till it's warm. (about 5-6 minutes)
Pour the mixture from step two into the casserole dish and flatten it out evenly.
Place the cheese slices evenly over the top of your mixture, they will strt to melt, then put the French's Fried Onion on top of that.
Finally, pour the mashed taters on top of everything, spreading them out evenly.
Eat.

Oh yes, hamburger can be used to make a couple of meatloaves or some home made meatballs or just fry it up and save it for later use. Put it in the freezer. I love to make home made meatloaf and meatballs. I normally make two meatloafs and freeze them or several dozen meatballs. Enjoy!
