then craving and laziness are the gossiping aunts. After getting home from the morning shift, I was craving for some pancakes and was too lazy to drive out to the nearest store. So I ended up making my own pancakes from scratch sans the baking soda and I made my own version of maple syrup as well made of sugar, more sugar and vanilla extract. Yummy! Have you ever made something from scratch because you were too lazy to go out and buy one already made for you?

I always make sure I have a package of blueberry pancake mix and a big jug of maple syrup in my cupboard for just such a craving, because yes, I have had to eat thin, flat pancakes made without the proper ingredients, topped with thin, watery syrup concocted from water, brown sugar, butter, and vanilla. I was walking home from the store the other night... it was almost 9PM and we were expecting a freeze before the next morning, so the Mennonite guy who lives nearby was out collecting the sap from all the maple trees up and down the road that he had tapped. I went over and watched as he emptied the buckets into a big vat that he was pulling along in a little trailer behind his ATV. It looks exactly like water! And only has a very mild sweetness to it. I asked him how it got brown and he said it was mostly from oxidation, just like what occurs when you cut an apple! I never knew that. But it is the syrup that will be made from these trees around me - the same sap that I stuck my finger in and tasted - that is what I will be consuming come spring! I love living around maple syrup makers!!

If you use brown sugar instead of white sugar it will be brown, and if you boil it down for a while... way to long to wait when you have a craving though, hehehehe, it gets a little thicker. Yeah, watching him was very entertaining and informative. The night was crisp and cold and both of us were bundled up warmly. There should have been a pond behind us with ice skaters on it, hehehehehehe.

Hmmm... maybe I will let my maple syrup concoction oxidize (I don't know how to) and then bottle it up. I added some flour to it to make it thicker but it wasn't any different. It is almost as if you have lived and interacted with about every person from different walks of life, Ziggy. The Mennonite guy came out of nowhere but watching him tap those trees would be something I'd like to take part in as well.

I did use brown sugar and also the granulated white one... I like it... so tomorrow I think I'm going to have more of the leftover pancakes as well as the syrup. yum. And then maybe get some Indian food for lunch. yum.

I like plumped raisins in my agave syrup and a little whipped cream on my pancakes. Yes, improvising is good and I do it a lot. Sometimes things turn out very tasty when we experiment :-) Often food made from scratch is healthier than stuff we buy at the store, too.

Hello drannhh... since I'm too excited to see you back here, I would let your affection for plumped raisins pass. Until now, I just can't get myself to eat them although I have tried. Thanks!

I once made ice cream from scratch... although that wasn't my intention. My plan was to make cheesecake pops but I added 5 egg yolks instead of just 2 and that somehow affected how the cheesecake was firming up so I put it in the freezer and it came out tasting as a cheesecake ice cream. I had to throw it out though since I keep taking it out and see if they are that right consistency for the pops but they never were. Thanks, riyasam and I hope you did have a grand time enjoying that ice cream you made yourself.

Funnily enough, I made pancakes last night! I haven't had them for ages and got this sudden urge to eat them. I didn't use baking soda either. It would have been great if I could have, but I didn't get to add maple syrup 'cos we don't have any. I did experiment a bit though and the second batch I made had cheese melted into them. I really don't recommend it!

I think the cheese would have melted better into waffles. Try mixing brown sugar, granulated sugar, butter, boiling water and vanilla extract for something like maple syrup. Pancakes always make me happy... and full!

Yes, one evening I got home from fetching my son and found that my husband had finished the bread so I made a batch of bread rolls and scones because I didnt want to go out again. It meant that we got to eat some whilst they were still warm and at their very best

Oooh, warm bread rolls are the best. I can just envision the butter melting away... yum yum. Thanks, wizzywig.
