Straight out of the oven....yummy!

I got some almost over ripe bananas at the store the other day for a lot cheaper than normal, so I decided to make some banana muffins today. The kids just gobble them right up and they are pretty health for them. I swear my son did not even wait for one to cool before he grabbed it. I made mini ones so they can just grab one when they get hungry. When was the last time you baked? DO you like banana muffins?

The last time I baked... it was awhile ago. It's been too hot lately and this place heats up too much even on a cool day! I do like banana muffins and banana bread. I made some awhile back, but it's been a long time!

I like just about any food that is infront of my face, but it is the desert that I like the most. If you would put a plate in front of me full of any kind of desert I would eat it even if I was full.

I have not baked anything in a long time! I should make more of an effort. I think of baking and I think of calories. But like you said, you can make thing that are healthy. And I would not have even realized that one could use an overripe banana.

Apparently you can put them in the freezer still in the skin and freeze them until you want to make muffins or bread too.

I like the muffins. No nuts though. Just my preference. Last time I baked anything like muffins was before my son was born. Around the holidays.

Banana muffins? That's something new to me (as are many of the things you mention). I haven't baked anything sweet for years. I'm not good at cakes and biscuits so I leave them for those that are and I do the savoury things

I made some banana bread a lil over 2 weeks ago. I made some cookie bars last week, I figure we've been haivng a cool spell I may as well take advantage of it as it will be hot enough sooner than later. Are the muffins that much different to make than the bread? I just got muffin pans a few months ago & I keep forgetting that I have them *LOL* Sad I know.

The recipie I have for Chocolate Chip Nut Banana Bread is beyond moist! I've been trying to figure out a way to reduce the moisture as it's so "heavy"

I adore banana muffins! I don't have a recipe for them though. It is kind of funny, I don't like bananas, but love banana bread and muffins. Any chance you can post your recipe? Do the bananas have to be all dark or can they still be yellowish? Do you put cream cheese or butter on them?

The riper they are the sweeter the muffins. Mostly we eat them with out anythign on them, but I just had one with some butter and it was GOOD!

I have done the same thing and also the freezer thing with bananas. I love banana muffins and bread. The muffins are much handier for your kids, since they can just pick it up and it doesn't have to be sliced. Not sure when the last time I baked. Maybe when I made some quick rolls for Easter dinner.

YUMMERS....I havent baked in a couple weeks, however I did just buy everything to make muffins.. I think I may make corn bread muffins... :P...I love banana muffins... although my favorite are rasberry muffins. :) Happy baking... What are everyones favorite muffins? Anyone want to share their recipes?

I LOVE BANANA MUFFINS!! Reading your post made me very hungry for one. The last time I baked was a while ago, but I've never really baked muffins. If I knew how to make muffins, I would probably make them every day lol.

The key to good muffins is to stir the batter as LITTLE AS POSSIBLE. They start to get tough if you over stir.
