Can you make good bread?

I finally made a very good bread last night, it was actually some small cocktail buns. It came out so soft and smell so "yeasty", I like the yeas smell very much. I have tried many times of different recipe of making bread but none of the times I succeed. This time I refridge the douh for 2 hours + rise in front of the fire stove for another 1 1/2 hours before I bake. This is best bread recipe ever, I'm having it for breastfast now Do you guys like to make bread? Any tricks into making bread? any good recipe to share?

If you need a trick, try this! Home made bread actually tastes better and has improved texture if you freeze it first, then eat it the next day when fully defrosted. For all of you using mixers, you are missing out on the joy of making bread. Let out all your anger and frustration while kneading the dough and feel the difference!

Absolutely! Kneading the dough is the best part of making bread (with the exception of eating it!)

I knead the dough after mixing it. But I thought it supposed to use mixer so the texture can be smoothier? So I could freeze the dough and thaw it before I bake it?

in china, we always cooking bread by steaming it in a bamboo steamer instead of baking like yours. it's very delicious too which is my favorit breakfast.

sorry,what's the 'lian yung'. we called it 'mantou', there is nothing in it . traditionaly,it's just a mixture of flour,water or milk and yeast(you can also add any other flour of grain you like such as maize,oat,millet,etc.)

I love to bake bread and make it different kinds of ways, but the basic "recipe" for homemade bread is simply a cup of warm liquid (milk, water, whey or any combination), a teaspoon of salt (table, sea or even pickling) a tablespoon of sweetener (white sugar, brown sugar, molasses, syrup, honey) two tablepoons of fat (olive oil, butter, canola oil, lard or whatever you like) and a tablespoon of yeast and as much flour of whatever kind you want to us as it will hold without being dry. You can make rye bread, white bread, brown bread... you can add small chunks of cheese, garlic and dried tomatoes to white or brown bread... add finely chopped jalapenos, onions and cheese or almost anything else you can come up with. Put it in about halfway through kneading it for the best results. Finer textured bread is made by not letting the dough rise more than once and if your bread tends to be crumbly, add more fat to it next time.

It means with very small holes instead of large ones. Fine textured bread isn't necessarily soft and puffy.

Ive been making my own bread for awhile too. The best LOOKING one i ever made had the best texture, sliced so nice, looked so nice. But when i tasted it, it was horrid. I for some odd reason added too much salt. I added 1 tbsp. instead of 1 tsp. thats quite a difference of amount. I made and ate the sandwich anyway. Then had a thirsty attack because of the salt. Anyway i put it out for animals to eat. Eventually it was totally eaten (by anaimals). I should have put water out for them too. LOL!!!

No yeast tea breads are easy. I also make good yeast breads but I don´t do it much now because I don´t think it´s worthwhile aas I live alone. I place the yeast with a bit of sugar and milk in a sunny place and then I put it in the flour. Then I make the dough.

Oh... yea I won't make any bread if I was a lone either, not even meals for that matter. I liek to make the dough close to the gas stove, it rises 3 times quicker!

It´s not fun to cook for one person. As I live alone, I invite friends a lot. If not, I´d live on just sandwichs

Thank you for sharing this...I will definately be trying it out. My only fail safe method is to use the bread machine. Im also from Georgia, so I have the option of copping out and just making good cornbread! hahaha!

I've never really made bread from scratch, but when I have sufficient power I do like to use my bread machine. Sometimes I let it do the whole process, but I enjoy just allowing it to knead and rise the dough then forming and cooking rolls separately. I love the smell of baking bread, there is nothing like it.

I love making bread, but don't often get the chance to do it now. The best part is the kneading--there's a moment when, if you knead the bread long enough, the dough suddenly comes alive under your fingers. And there's nothing like the smell and taste of home-baked bread, especially because you can make it exactly how you want it! I would say, don't be afraid to add all kinds of different things to any basic bread recipe--I particularly love fresh Romano cheese and fresh rosemary.

I likie to add different ingredients into the a simple bread recipe as well but one thing is sometimes I don't control the time of baking very well if I put extra ingredients into the bread like little meat and cheese.
