What are some of your go-to hot weather dishes?

Yesterday, it seemed like it had cooled down a bit, but the wickedly hot temps seem to have returned with a vengeance today. It makes it so that I don't even want to do much cooking most of the time. What are some of your go-to dishes when the temperatures get brutal? Much of my food creativity seems to have gotten zapped by these temperatures along with my desire to do much cooking.

My husband is a huge fan of salads. I think that he would be fine with them as the primary food throughout most of the summer.

Well, the other day was one of our hottest days of the yr. It was actually only in the mid to high 80s, which would be Cool for many states is warm for us. Especially since most people do not own Air Conditioners due to the weather being usually a lot cooler. But it was horrible, so we just fixed something quick and easy like Tacos as all we had to do in the way of cooking was fry up the hamburger meat and add in the seasonings. But another quick thing is sandwiches of some sort as well.

Quesodillas are a good go to dish as you can just pile some cheese on a tortilla, stack another one out there and put it in the microwave for a minute and there you go. You can also of course add some salsa, some green pepper, onions, left over meat, what ever you want and it is done in just moments and no need to light the oven.

I feel the same way - usually I make delicious subs when it gets too hot. I put tomatoes, lettuce, banana peppers, oil and vinegar on top. I use ham, turkey, cheese, and whatever else the kids want.

I like to eat seafood and cold salads when it's hot out. Or I just order out so I don't have to cook.

When it's really hot I make some refreshing salad. To do this you need ice berg lettuce, feta cheese, 2 tomato, olives, cucumber, spring onion. Cut everything in small pieces add some vinegar, salt, pepper and some sugar ( just a bit to have balance). This salad needs to rest in the fridge 1 hour before serving. Enjoy!
