Cashew nuts from our baby cashew tree

As some of you know we lost our cashew tree way back but it did leave behind a sapling which has now grown into a full tree and has started yielding. We get cashews everyday these days.They will be there for another couple of months. We used to make cashew juice and wine from the cashew apple but this year I will have to forget about it as our maid is on leave . The nuts are collected and the cashew apples put in the compost pit. Cashew nuts have a good sales value. Cashew nuts help reduce the bad cholesterol. Have you tasted cashew apples? I cannot eat them as the astringency in them affects my throat.

We have never seen or eaten cashew apples, but do enjoy cashew nuts. We also really like cashew milk and cashew butter too.

@allknowing Cashew milk is made like almond milk by grinding cashew nuts with water and straining the liquid. These nut milks are becoming increasingly popular in the West as an alternative to dairy milk.

@owlwings Thanks. May be it is available here as well considering in certain parts of India cashew is grown as a commercial crop Wonder how it compares with milk in terms of health and value. This milk could be healthier as it increases good cholesterol.

We used to make juice which I will still do if my maid returns before the season gets over. You have to steam the cashews, cut off the edges, squeeze out, add sugar syrup and a preservative and this can be kept for agesin the fridge.

I am fascinated to see this. We buy cashew nuts here but I've never seen them growing and I didn't know what a peculiar fruit they are, with the nut growing under and outside the 'apple', until I looked it up. I was surprised to find that the tree is a native of Brazil, though it was introduced to Goa and the rest of India by the Portuguese in the 16th Century. It is also very odd that you can eat the 'apple' and the nut, though the shell of the nut is toxic and can cause severe blisters! Does your picture show the nuts in their shells? If so, how do you usually process them to remove the shells? Do you roast them?

@allknowing Fascinating! I wonder how much you sell them at. We buy them here (of course, processed packed, shipped and with the retailer's profit added) at between £10 and £12 per kilo (in smaller packets, though) that's equivalent to between about 800 Rs. and 970 Rs. I use them quite a lot. They are very good stir-fried with chicken or in a chicken curry and I also add them to a wet salad with celery, apple and mayonnaise.

@owlwings The rate differs from year to year. We will have to wait till the season ends. Last few years we did not have any but if I remember it was around Rs. 50 a kilo in the good old years. Cashew nuts are used in several ways dishes and desserts. Even the raw ones are sliced and the tender cashew nut is used to make 'payasa'

I was hoping someone would talk about the shell. The shell is not eaten. The nut with the shell is roasted. We do that sometimes at home but it is a messy job. There are cashew nut factories that do that on a big scale. My husband's cousin has factories. We sell the nuts to dealers here. The shell is used to extract oil which is used in paints, insecticides, etc.

The cashew nut is stuck outside of the cashew apple You could call the cashew apple the hull - not sure what you mean by it.

I didn't know cashew nuts grew on a tree, or that there was such a thing as cashew apples. What are cashew apples?

These cashews seem to be very big rather than baby cashews Cashews are expensive nuts and sometimes I like to bake them by my bread machine. It is a convenient way for me to make it at home. I haven't seen cashew apples yet. They are something new for me.
