What did you have for dinner this evening?

I had a busy day at work and didn't really get lunch. When I got home, I made some Trader Joe's Kun Pao Chicken and added garlic, onions, and peppers. It was yummy, but since it was really more of a late lunch, I still may order some Tom Kha Gai from my local Thai place later. Did you have anything good? Do you like adding stuff (onions, etc.) to food that's already ready to go? I'm heading to Trader Joe's now, and will probably pick up an onion, more garlic, some peppers, and some cherry tomatoes.

I made a herb crusted salmon, served with asparagus and a mixed green salad. I never buy ready made food.

We had leftover udon (Japanese noodle soup) from last night. I rarely add "stuff" to ready made foods because I'm too lazy . Have you tried TJ's organic sugar plum tomatoes? They are sweeter than the regular cherry tomatoes . . . we love them!!

I have not! I like both cherry tomatoes and Roma tomatoes. I am about to harvest one (yes, one) cherry tomato from my balcony.

That sounds lie a terrific dinner. Lucky you. I am still on a no chew diet so I had cilantro lime rice with a ground pork chop mixed in it. Believe it or not it tasted pretty good.

@TheHorse They've been on sale because of the upcoming Super Bowl, so I stocked up on a few. DiGiorno rising crust pizzas for $2.88? Yes, please! Some people keep boxes of mac & cheese on hand for last minute quick dinners, I keep frozen pizzas.

Hubby had a steak he threw on the iron skillet as I walked in the door. He had sweet potatoes ready to put in the microwave. I added tomatoes and steamed broccoli. There you have it, our delicious dinner.

I had a delicous spinach salad and a piece of cheesecake both of which I got essentially for free! yay me! Kung Pao Chicken is tasty! I sometimes customize food I buy...yes.

I really like their stuff. I used to "import" Two Buck Chuck to Spokane, where my brother and his wife lifv. But I think they finally got a Trader Joe's there.
