What did you have for dinner this evening?

I had a busy day at work and didn't really get lunch. When I got home, I made some Trader Joe's Kun Pao Chicken and added garlic, onions, and peppers. It was yummy, but since it was really more of a late lunch, I still may order some Tom Kha Gai from my local Thai place later. Did you have anything good? Do you like adding stuff (onions, etc.) to food that's already ready to go? I'm heading to Trader Joe's now, and will probably pick up an onion, more garlic, some peppers, and some cherry tomatoes.

I made a herb crusted salmon, served with asparagus and a mixed green salad. I never buy ready made food.

We had leftover udon (Japanese noodle soup) from last night. I rarely add "stuff" to ready made foods because I'm too lazy . Have you tried TJ's organic sugar plum tomatoes? They are sweeter than the regular cherry tomatoes . . . we love them!!

I have not! I like both cherry tomatoes and Roma tomatoes. I am about to harvest one (yes, one) cherry tomato from my balcony.

@TheHorse I like all kinds of tomatoes too. Oh, that's right that you grow your own . . . nothing like having your own harvest - better one than none!

That sounds lie a terrific dinner. Lucky you. I am still on a no chew diet so I had cilantro lime rice with a ground pork chop mixed in it. Believe it or not it tasted pretty good.

@jstory07 Thy really do. I use garlic as often as I can as well. But I don't put garlic in salads.

We had frozen pizzas and salad! I needed an easy dinner that wasn't a casserole, plus I needed to use up salad greens before they wilted too much.

@TheHorse They've been on sale because of the upcoming Super Bowl, so I stocked up on a few. DiGiorno rising crust pizzas for $2.88? Yes, please! Some people keep boxes of mac & cheese on hand for last minute quick dinners, I keep frozen pizzas.

Hubby had a steak he threw on the iron skillet as I walked in the door. He had sweet potatoes ready to put in the microwave. I added tomatoes and steamed broccoli. There you have it, our delicious dinner.

Last night was mashed potatoes (made with heavy whipping cream since I couldn't find any sour cream in the fridge) and roasted broccoli. Tonight it will be smoked chicken, quinoa and roasted sweet potatoes. I had best get busy. DInner is an hour and a half away.
