I have never bought canned potatoes before. I have a giant #10 can of potatoes that my brother brought down on Thanksgiving along with giant can of green beans and a giant can of corn. I have used the green beans and the corn, but what do I make with the potatoes? Anybody use these things? Anybody have a recipe using a LOT of canned potatoes? Help! I don't want to leave the can sitting in the pantry too much longer, but I don't know what to do with them.

You could use them like fresh cooked potatoes. Saute some onions and slice the potatoes and fry also use in scalloped potatoes. Make potato salad. I was going to say combine The potatoes and green beans add some hamburger and you have green bean soup. but you already used the beans

I would make the potato soup. Make a nice cream sauce flavored with chichen bouillon, puree some of the potatoes and put the rest in. Corn is always good in potato soup too.
Of course, stew is always an option, especially if you have some leftover roast and can use that to make it up quickly. Wish I could think of some more creative ways for ya...Whit

Canned potatoes are good for a bunch of things. You can cut up carrots. Put them in with pot roast. THey soak up those juices and yummy. Dice em up and fry em. They go good with an omlet. Or after you dice them put them in veggie soup. Or you can make crock pot potato soup.Cube as many potatoes as you want and put into a pot.Finely chop a
onion-again as many as you want and put that into a pot.Cover with water and
bring to a boil.Turn down heat and cook until vegetables are done and water is
mostly gone.Stir in some butter and canned evaporated milk. Also add salt and
pepper to the potatoes while they are cooking. Just about
anything you can do with a regular spud you can do with canned ones too.

I have a few suggestions. The first is if they are whole potatoes, use them to make fried potatoes either for a breakfast or even dinner. I know the new healthier way to cook is the craze, but sometimes alittle fried food makes you feel better. Dont over do it. And because it is a GIANT can have you thought about having a few friends over for a Sunday breakfast? Fried potatoes can be done with a little canola oil or any oil you use. Also you can fry them in margarine. Cut them, season, and brown them since they are already boiled. Serve with a fried chicken boneless or not. Yummy. I cant help but love that meal. I think I will cook that. I now need a can of potatoes. lol The second suggestion is to donate them to a food pantry, homeless shelter, church rectory, or how about a needy large family. Good luck
