Wow! I just wrote a really long description, and it went away into cyberspace. I'll give you the short version. My kids could take turns being the one to choose what would be hidden inside the meatloaf. I didn't mess with the meat mixture, but I alternated layers of meat with layers of cubed potatoes, sauteed onions, tomatoes, cheeses, sliced eggs, all sorts of veggies, A1 or barbecue sauce, crushed potato chips, and whatever was in the fridge. I could even get them to eat broccoli if it was cheesy and inside the meatloaf. It was a great way to use little bits of leftovers. Experiment. It's fun!

Thanks for the "best response". Play around with the ingredients so something as simple as meatloaf can be a special and different dish every time. Enjoy!

I use ground turkey or chicken. From there, the sky is pretty much the limit in terms of what I will toss in. In terms of veggies used, it often comes down to what I have and what needs to be used up.
Carrots, peppers, barbecue sauce, curry powder, onions and oatmeal are just some of the ingredients that have found their way into my meatloaves.

Mines not very unique to me but it might perk your imagination a little more. I put an egg, cream of mushroom or celery soup, I use Italian breadcrumbs (more flavor), garlic and onion powder or chopped white onion, 1 package of brown gravy mix. I think that's it. I put a can of green beans in once and no one ate it but me so I don't suggest that one. Have fun!
