Made stuffed peppers tonight, they were good. Do you like stuffed peppers?

I precooked some rice, added a touch of tomato sauce, then hamburger and a small amount of onion soup mix. Stirred and put it into half a green pepper and then some in the other half of a green pepper. Then I topped them with cheese toward the end of their cooking time. The rest I cooked as meatloaf. I also cut an acorn squash in half and put butter on each half. I cut a cucumber up and had that with peppercorn ranch dressing as a dip. So do you like stuffed peppers, acorn squash, and cucumbers? Do you make stuffed peppers the way I did or do you do something different? I've also just seasoned with lemon pepper and skipped the tomato sauce and cheese, I've put a dollop of ketchup on top instead. I've used crackers instead of rice. I've also used oatmeal instead of rice. The green peppers were huge, twice the size of a normal pepper. That's why I had to cut them in half. What do you like to eat with stuffed peppers? If you don't like stuffed peppers, what do you dislike about them? Have you had them different ways or only one way? Thanks and take care

I don't eat green peppers because I don't like the taste and it upsets my stomach..But I like stuffed red peppers and love stuffed tomatoes made like you made yours, with rice,hamburger and onion, but no ranch dressing, the doesn't sound appealing to me..

I think the green peppers are more acidic than red ones..

The ranch dressing was for the cucumbers as a separate salad before the stuffed peppers. Wonder what the difference is with red and green peppers for your stomach. Thanks and take care.

Man, you must have been reading my mind. I want to make meatloaf for tomorrow. I have a huge bell pepper, but I am going to put it into the meatloaf, at least some of it. It was all I could do to stop myself from buying acorn squash at the store last night. It all sounds like delicious fall food. I am going to come for dinner. I also have a recipe for pepper jelly, and need to get busy and do it.

This reminds me, I have two pounds of ground beef in the freezer specifically labeled, "Meatloaf." Need to get to that soon.

When I was younger, I liked raw bell peppers but never was thrilled with cooked. Now I can't eat them either way, since my allegies have gotten so bad. My mom used to make something she called "porcupine balls" that was basically her stuffed pepper stuffing without the peppers and she'd make that for me.

i do like stuffed peppers. i basically just make up my regular meat loaf recipe & add it to the peppers. i like to put salsa in my meatloaf that gives it a litlle different taste.

It is quite a mouth watering. Your this dish has taken me back to 45 years and remember me my maternal grandma. She was expert to prepare such dishes and all our family members use to ask the grandma called Baijee. She used to prepare the stuffed peppers called Kashmiri Mirch. Cheese and potato stuff filled in the peppers was fried on the simmering heat. To remember it I am getting mouthwatering just to eat and enjoy. Enjoy happy cooking.

Chese and potato stuffed green peppers, I will remember that for some time when I bring food a distance, better than using meat which is too dangerous when I have to travel to bring food. But cheese and potato should be alright. Thanks and take care.

I have only eaten stuffed peppers twice in my life. Both times I didn't like them. My mother made them, she was a terrific cook but I couldn't handle them. About have gagged when I tried to swallow..lol Most of the ingredients you mention above I don't care for and won't eat. I can remember my father gobbling them right along with my mother but my brother and I refused to eat them. I really think it's the only meal she made that I couldn't tolerate. My husband wouldn't eat them either since he doesn't like stuffed peppers or any kind of peppers.

My husband and I won't eat cooked spinach, swiss chard, etc., no cooked greens. We hate them and they make us gag. But I like everything in a stuffed pepper. To each their own. Take care

My husband and I both love stuffed green peppers. We have a garden of green pepper plants. I made some just the other day and they were so yummy. I usually have mashed potatoes with the stuffed peppers. I also like to eat them raw with a little salt on them. I use the green peppers in my meat loaf , chili soup, and many other recipes that I make. I even freeze them so I can use them all winter long.

Maybe you need different peppers? Maybe different meatloaf type recipe? Maybe roasting the peppers first? My husband likes them way better than I do. I liked them more with less tomato sauce, some people like them with more. Thanks and take care.

I do like stuffed peppers but for some reason, I've never prepared them myself. That seems crazy because I do love to cook. Yours sound really good. I absolutely love acorn squash. and I love cucumber all by itself or with a fat free salad dressing for dip. Your green peppers sure sound huge. I'm not sure what I'd serve with green peppers, probably a vegetable of another color, like carrots, squash, etc.

actually, I am a vegetarian, so I imagined the same recipe with potatoes instead of meat. I'm sure my mother will try it out some day when she is free.

I love stuffed peppers but haven't had the chance to make any for a while. I like to use ground turkey or chicken (I don't eat beef); I've also done couscous stuffed peppers, and those turned out extremely well. Acorn squash is good, but I like butternut squash better. Cucumbers are good. I usually include them in my salads.

Couscous sounds like a good one to try. I like ground turkey, too, but my husband doesn't. So I have to have that when he isn't around. I like a lot of different squashes. Butternut isn't grown here by very many people, I think it probably takes a longer season. Also is a pretty big squash for two people. I could have a different squash every week and be extrememly happy. Thanks and take care.

Hi, I love stuffed peppers. In fact I fixed them a few nights ago. What I do is cook the pepper just a little in some boiling water. Then I cook rice and mix cooked hamburger and spaghetti sauce with the rice. I fill the pepper with the rice mixture and put a slice of cheese on top. Pop it in the oven for a little bit til the cheese is melted. Yummy. The pepper was really large so I cut it in half for my husband and me. We actually could only eat half of that. So the rest I cut up and put into the leftover rice and had for leftovers the next day. Sounds almost like yours

Yes, it does sound very close. But my husband likes his green peppers firm, so I precook the hamburger(he's paranoid about the meat not being cooked enough) and then the peppers are more firm. Thanks and take care

hmmm ... your recipe really made my mouth water. I like Pepper along with some of the dishes but I had never had stuffed peppers. Are they delicious? I would like to try your recipe sometime later, when I find time,I should ask my mother to cook the dish.

i love green peppers. we always served with mashed potatoes and some of the tomato sauce/juice over it. now my mom makes green pepper soup which is awesome and tastes just exactly like green peppers you cook in the stove. my daughter hates stuffed green peppers. she states the pepper tastes too strong. and she'll eat the inside out of stuffed peppers, but not the actual pepper.

These peppers are so huge, that the inside is cavernous, I think the green pepper taste is pretty strong, too, but that's how it offers variety from being meatloaf or a meat ball. You know?
