what is your favorite spice/seasoning to cook with?

I live all seasonings for different types of food, I use salt and pepper a lot, but I love garlic too.

in india we add many spices .i add ginger garlic in some curries and for more spice in non veg curries called cardomom,corriander powder,nutmeg ,mace, red chilli powder,cloves,fennel seeds,cinamon . we make make powder of these spices and add just 1 spoon to any curries we make. we add 2 spoons in non veg curries. we keep stock of these mixed powder in big bottle and we will add in any curry we make daily ,in our indian houses.there will be no houses without these ingredients. for seasonings we add turmeric,mustard seeds,black gram,corrainder leaves,mint leaves,amchur,ajwain,star anise,chironji,badam, cashew nut ,peanuts,rose water,asafoetida ,tamarind,cumin seed,curry leaves,black salt,kalonji,kasurimethi, saffron,dates,poppy seeds,mustard oil,lemon juice,lemon, onion,citric acid ,veneger,dill leaves,seseme seeds,basil leaves,and many more. some of these seasonings we add in starting of the cooking curries and some we add at the end of the prepared curries(veg or non veg curries). in india we have many ingredients for each recipe we make.

I would have to say garlic. My sense of taste isn't very good because of an accident I had a few years ago. Most of the time I can taste garlic and salt but don't cook with salt because of high blood pressure. My husband and I both learned not to use it. I can't taste pepper so I don't cook or add it to any foods. As time goes on, my sense of taste is better but is a long way from being 100% again.

Salt, pepper, and garlic are very common in my cooking. I also use a lot of parsley and oregano in things. I like to try different spices in things sometimes too. Most of the time it turns out pretty good.

For me it really depends on the dish. I am trying to cut back on salt. So we use more spices to flavor things up. Chili powder and garlic are ones that come to mind.

I love GARLIC! Yum! I seriously add it to ANY vegetable that I'm eating, especially broccoli & green pepper. Oh yum. . I don't really use any other spices, but I have used cilantro & bay leaves before.

On most of the dishes, I have salt and pepper. Like you I also love garlic. And I also love using rosemary for chicken.
