Mom Diagnosed Diabetes - Looking for Low-Carb Recipes  |

My mom recently was in the hospital - the reasons are far too involved to get into but the medication they put her on took her from pre-diabetic to just diabetic so now she is really trying to watch what she eats but is very confused. My plan is to make her a recipe book as a Christmas present with various low-carb recipes in them compiled from different sources tailored to fit her likes and needs. I have a bunch of recipe books from the library I intend on using but I was wondering if anybody has any interesting recipes they'd be willing to share with me. Maybe even some neat holiday recipes - Halloween, Thanksgiving, or Christmas? Or even as far away as Easter? Remember, we are thinking low-carb. If you having something you'd REALLY like to share but are unsure of the carbs, post it anyway and I can look it up.:) Thanks ahead of time for any suggestions!

2. Canellita (3308) | 3 months ago | It's the sugar that is more of an issue than the carbs. She needs to learn which foods are more likely to raise her blood sugar. There is all sorts of stuff on the web from reliable sources like doctors and the diabetes association.

Here's an example: mom loves baked potatoes with lots of stuff on top but one potato has 60g of carbs let alone what she wants to put on it and the other parts of the meal. Our dilemma is that both of us love carbs, I want to lose weight - and she wants to keep her blood sugar down. Damn you carbs for being so damn tasty!!!

Kowgirl (2457) | 2 months ago | Sorry to say Canellita but sugar alone is not the enemy. It is any foods that have a high carb count like potatoes. But there is still a way to eat potatoes, pasta and even cakes. Then there are some that are high in crabs but are slow to digest so they are also permitted on our low-card diet. Like apples and sweet potatoes. I have been diabetic for years and I can still use sugar, I just can't have a lot of it. Be careful of foods that say they are sugar free. Sometimes they are very high in crabs and are bad for spiking our glucose.

Kowgirl (2457) | 2 months ago | Carbs are sugar so we have to count them otherwise we could not keep our blood sugar level. Junk foods are loaded with carbohydrates that's why we have to stop munching out on them. Please read my blog, I got my information from doing interviews with doctors who specializes in Diabetes. It explains what type 2 diabetes is, the complications and why we don't need all those bad carbohydrates. It also has tips on how to keep your blood sugar down to an even level.

Canellita (3308) | 2 months ago | No one should be loading up on junk food regardless of what their health issues are. Unless her sugar is dangerously high type ii can usually be controlled with a combination of diet, exercise and medication. If you make the lifestyle change you don't even need medication, but it takes discipline.
I do not have diabetes. I don't need more information, however I did compile extensive information for others who had it and based on their histories I stand by my earlier comments.

3. Kowgirl (2457) | 2 months ago | I have a big collection of recipes for diabetics on a Squidoo lens. I also have a blog that is "Just Desserts" for diabetics. I can send you the links to these blogs and you can copy and use these recipes. Most diabetics think they can't eat desserts but I have found quiet a few that I have put on my blog. I just made a lime cheesecake that is delicious and it does not have any flour in it. I will be adding more recipes on the Just Desserts blog some time tomorrow or maybe even tonight if I have time. Here is the cheesecake recipe.
In-A-Snap Cheesecake
This vanilla cheesecake can be thrown together in a snap. You can even change the flavor by using different flavored gelatin but most people prefer this plain vanilla which can be topped with the fruit of their choice. This make-ahead recipe is fast and delicious. Try it with a dollop of sugar-free jam or fruit slices on top. It's lip smacking good!
Makes 8 servings
Ingredients:
1 Envelope unflavored gelatine (Knoxx®)(or any flavor sugar free Jell-O) 1/2 cup sugar or artificial sweetener(Splenda®) 1 cup boiling water 2(8oz)cream cheese, softened 1 tsp vanilla extract (optional when using flavored gelatin) 1 (9in)prepared graham cracker crust(***or make your own "faux" crust(below))
Directions:
Mix gelatin and sugar(Splenda) in small bowl, add boiling water and stir until gelatin completely dissolves, about 5 minutes.
Beat cream cheese and vanilla in large bowl with mixer until smooth, slowly beat in gelatin mixture.
Pour into prepared crust.
Refrigerate until firm
Top with desired fruit or jam just before serving. Carbs=8g to 11g depending on crust ***You can reduce the crabs even more by making your own crust... Sprinkle 1 tablespoon wheat germ and 1 tablespoon sugar substitute over the bottom of the pie plate to create a "faux" crust.
