Playing With Spices

Okay...so I was at the local health food store a couple weeks ago because someone told me they had the lowest prices for spices. Unfortunately, I could not remember which spices I needed. I ended up buying some turmeric because I thought I had seen it on one of the recipes I was wanting to try. Well, it has sat on my shelf now ever since...until today. I had made a pasta salad with dill pickles, onions, tuna, pasta and some mayo and brown mustard. It was pretty good but then I thought, what would the turmeric do to it? So I put in about 1/2 teaspoonful of the turmeric. Guess what. It was pretty yummy. Have you ever taste tested a new spice? I think the mayo base lent itself well to my taste testing. The mayo's mild flavor allows the flavors of the spices through so that you can get a real feel for them. We don't always have a set recipe that we can use for a dish so taste testing is a good way to familiarize yourself with a spice and figure out new recipes to use it in. I think it's a lot of fun, too.

I love cooking with new herbs and spices.I also have found that the cheapest place to buy them is at some health food stores. I like turmeric and ginger. I like to use them with chicken and or rice. Ginger with honey is good in carrots too. I also like to add basil to mashed potatoes. It's fun ti learn how to cook with new herbs and spices. You can do so much with them to add flavor and they can add some health to your cooking. Did you know that turmeric is good for inflammation? Ginger is supposed to help lower high cholesterol.

Well, I know that cinnamon is supposed to help diabetes. I use basil all the time...it's like, my favorite herb for cooking. Much prefer it to oregano which so many people use in their Italian cooking. I like the sweet herbs better than the bitter ones, though. I did discover that I don't care for sage all that much but I always keep basil and chili powder on hand along with my garlic powder. They are the three seasonings that I use literally ALL the time. I am really looking forward to the arrival of my saffron bulbs next month. Saffron is one of those seasonings that is very rare and expensive...it's like the most expensive seasoning on the market...so I have to grow it myself. It's the only way I can afford to use it! But it is soooooo worth it!

I do like sage as use it on pork and poultry such as chicken and dumpling, roasted chicken and turkey. I also like t o add some hot sauce to some dishes to bring out the flavors. Not so much as to make it hot but to give it zing.

Turmeric is good for inflammation?!? That is good to know!! Perhaps I should go buy some turmeric and use it for dinner tonight. My husband broke his hand over the weekend and it is quite swollen. He doesnt want to take any of the medications for it because he keeps telling me it doesnt hurt that bad. But if I can sneak in something that will help him... Thanks for that tip!!

hi alaskanray I love herbs and spices too. When we make a salad you will barely see the ingredients cause there is a loooot of parsley and dill in it, LOL. I also love really spicy stuff like cayenne powder, really hot curry powder and the like. The best are these chili pepper flakes they are piping hot and are excellent in stews of all kinds.

Yes, I too like the spicy foods although I must admit there is a limit for me as far as the heat goes. I once shook out a bunch of those red pepper flakes onto my pizza and was in tears from the pain! LOL...Lesson learned! We all have our limits and our own individual taste.

I have done this too!! Spices are so expensive, that I often try to substitute for things I dont want to buy for just 1 recipe! The end of last week was so hot here, that I wanted to make something that I could eat cold. I looked through the cupboard to see what I already had - not much because I have been trying to eat up everything I already have!! I did have a box of pasta, so I decided to make a pasta salad. I cooked the pasta, cut up some peppers and onions and mixed it all together. I added a little bit of olive oil, then the problem was picking out what seasonings to use! I ended up just using a little bit of parsley and some Italian seasonings. I was a little worried that I wouldnt like it and it would go to waste, but it turned out pretty good!! The best part was I already had all of the ingredients and didnt have to spend any money to make it! I definitely want to experiment with more of my spices now. I am getting so tired of always eating the same things!! Glad your pasta salad turned out well too!!!

I wish I could help you with that!! Unfortunately, everyone thinks I am crazy, but I really dont like cinnamon!! It is too overpowering and just not my cup of tea!! I would imagine though, that you could use cinnamon sticks in a stew or something to infuse the flavor - then just discard the sticks after cooking. Good luck!!

"Necessity is the mother of invention." I want to find more recipes that I can use cinnamon in since it is supposed to be good for diabetes. We usually think of cinnamon as a sweet spice but as a spice there really isn't any sweetness to it so it can be used in savory dishes, too. I would like to figure out how to use it in savory dishes like my meat dishes. If you find any recipes or have any suggestions, that would be great.

Well, I prefer to use the powder, thanks. I know several friends who also dislike cinnamon. It is available in pill form for those who really don't like it, though. The health benefits are myriad. Check out this article: http://www.thyroid-info.com/articles/cinnamon.htm My favorite hot cocoa mix, Ibarra, which comes from Mexico, contains cinnamon and is very low in sugar content. I love it.

lol our food are always rich in spices, one can buy ready made, i mean different ingredients mixed and grinded in sealed packets, but my wife never go for those, they are adultered generally we buy turmeric, red chilly, cuminseeds, cardamom etc, dry them in shade, than add them in a definite proportion, grind them using our grinder at home, the flavor is retained, 2 spoonful is enough.. I love cooking so much and I am the type of person who loves to experiment on the spices available at my kitchen. I agree not all of the ingredients in the recipe are available especially if we really want to cook a particular dish. Thanks for sharing this turmeric spice here in mylot. I would love to try it one of this days.

I am going to have to try some other new spices now. It's always fun to discover what the flavors of a specific spice is and get familiar enough with it to figure out what you would like to put it into and create new recipes that way.

hi, turmeric is used mainly for Asian rice dishes, or if you want to add natural spice color to your cooking, it's what we Filipinos call " dilaw" or yellow because it is exactly what it is yellow ginger. If you like or have tasted Java rice, then that's what gives the distinct color ( so delicious with bar-b-q and sate babi sauce). Yeah, now I need to get a collection of spice jars to put my spices in. The health food store just puts them in bags and that is not the best storage for spices.

Yes, we get our spices in the store that way, too, but it is way more expensive than the health food store. I do save my empty spice bottles that I do have and use them to refill with the spices from the health food store. I just need to get more bottles emptied so that I have a place to put the stuff that comes in the bags.

When you buy spices here, they are already in small bottles with pre-determined weights similar to a pepper shaker so it's not that expensive, most notable are the Mccormick and Lady's choice brands, they look so neat to line up on the spice cabinet with those distictive yellow or green caps, makes it easy to pick while cooking. Recycling cool looking bottles if I may suggest is also a good Idea, we sterilize them filled with water, boil and leave boiling for 15 min more to kill even the toughest spores, then my mom leaves them upside down to dry over night, we use these jars for bigger herbs and spices like whole pepper corns, recycling bottles saves us a lot and helps the environment too.

I will have to check the local health food stores next time I need some spices I guess. I have never used Turmeric as far as I remember. I don't get too adventurous with spices normally.

Turmeric is one of the spices used in curry so if you have ever had curry, you have had turmeric.

Hi alaskanray, I use turmeric in almost all the dishes upto 2 to 3 pinches. And in non-veg I use upto 1table spoon. I hear from my grandmother as it is good for health. I want to try new dishes with mustard powder, but my family members doesn't like mustard. Experimenting a new dish lets us learn 2 things, either the combination is good and can be enjoyed next time or the combination is bad and never to cook it again. Really cooking and experimenting on spices is fun.

I always use the dry mustard in my deviled eggs. It really adds to the flavor of the yolks. I also have put dry mustard in my potato and pasta salads in the past. There are many uses for the powdered mustard. It never takes a lot, either.
