It was really good. I love how black-eyed peas thicken up. Used pork shank, it was good - threw in some thyme, a bay leaf, chopped up bell pepper, onion, garlic and some Cajun seasoning.

Of course you want good luck, who doesn't?! The Southern tradition is that in order to have good luck in the new year you have to eat Black Eyed Peas on New Year's Day.
