The end of the pork roast

We are able to buy pretty small, lean pork loin roasts, but even a small one is a lot for two people. We usually get about three meals out of one after we (usually) cook it in the crock pot. The first time, we eat it with potatoes or brown rice and some vegetables. Number two meal, a day or two later is a variation on number one with some different vegetables. But number three is my favorite. Anne makes some delicious enchiladas out of the last of the pork roast, adding (this time) some left over fennel and onion, some fresh spinach, shredded Napa cabbage, sweet roasted peppers, a little jalapeno, black olives, shredded cheese and a medium red enchilada sauce and it is delicious. Three meals for two off one little roast is great. How do you like left overs?

I put my freezer to good use. When I dine out, the meal is almost always four times what I eat at one meal. Take a chicken and rice burrito as an example. I get a side of beans, and eat 1/4 of the burrito in the restaurant. When I take it home, I cut it into three large pieces, put each in a plastic container with some of the leftover beans, and freeze them. When I want another meal, I heat this portion with some of the beans, add cooked carrots and black olives, then top with cut up tomatoes. It's a full meal. Sure makes dining out cheaper when the bill pays for several meals.

Oh yes, that is the way to deal with the restaurant left overs well. The price per meal goes way down.

@JamesHxstatic I have two specific restaurants where I "do my shopping" for my freezer. At CPK I eat a half salad and order three child's Hawaiian pizzas ($5.50 each) to go. I wrap them by halves, and freeze. I reheat one half of one in the oven and add a salad. Voila, lunch for little time, effort or money.

yummmmy! i love enchiladas of any kind! i love to buy a big pork loin & cook it in the crockpot. then we use it for a few meals, usually some pork tacos.

We usually start out with a southwest seasoned pork roast, then use it over a starch, like rice or potatoes. Then a couple of other ways, including burritos or enchiladas. I seldom cook veggies with the roast,but do enjoy them as a side.

I love a pork roast in the crockpot and find that I also have leftovers for other meals. I like to make shredded pork with some bbq sauce and put it on a roll with some cole slaw

We usually get three meals from a pork loin as well. I typically the last of the left overs and shred it and add bbq sauce. Makes great sandwiches.

We also have been cooking the pork roast in the crock pot. It makes it so tender. I like my leftovers the same way because a second day it is just more tasty thank day one. Usually doesn't make it to a third go around.

When I buy a small roast (lamb or pork) we usually just get two meals from it, but I don't do anything fancy with it.

We love left overs. We find roasts good value for the two of us. We cost the meat out per serve rather than looking at the total price. The enchiladas sound yummy.
