January crockpot report card

For the past three weeks, I've been loving to cook in my crockpot and have easy meals with leftovers. I love exploring to find new recipes online and start off with easy ones with ten ingredients or less. Here's the list of my first three meals with my commentary notes on it. 1. Cheesy Rotini---Though used as a side dish for a family of three or more, I've made it a main dish. It was delicious and yummy. I would give it a A-, since I think I needed the Velveeta cheese to melt for a few minutes more. Since I had one helping of it, I had no leftovers. Good news! I do have leftover ingredients to make it for this Thursday night's dinner. I had frozen leftover rotini in the freezer for three weeks now. 2. Crockpot Creamy Mushroom Chicken--A fulfilling yummy dish to add with any side dish. Two weeks ago, I've had it with corn. Though I had leftovers last week, it went spoiled before I could see use. I did have ingredients and picked up a can of cream of chicken soup for tonight's supper. I would give it an A+. I do have leftovers to have for Tuesday's dinner. 3. Crockpot Hawaiian Chicken--Another delicious and easy dish I've found on Pinterest. I had leftovers from last week's dinner and had it last week to replace the creamy mushroom dinner. Once again, it was scrumptious. I would give it a A, since I think it would've better with crushed pineapple than with chunked pineapple. Note to self for making it later this year. For February, here's what I'm planning to make: Zuppa Toscana soup (both recipes found on Pinterest and Recipes that Crock website), Baked Spaghetti with Meatballs (both recipes found on same site, though I did find a turkey meatballs recipes that's not for the crockpot and baked in the oven separately), and Chicken Marsala (only on Pinterest). I hope to do side dishes, breakfast and desserts in the spring. I also plan to swap ground beef recipes with ground turkey and maybe swapping pork with a vegan meat alternative like tofu and beans. Pork chops and pot roast may be hard to do with a meat exchange. What's your favorite crockpot recipe you've made this month? What dishes are you planning to make next month? Bon giorno!

Buongiorno! I do not have a crockpot, but I still cook using my old Italian clay pots that are great for very slow cooking.

I did cook a roast with potatoes, carrots and onions in the crock pot. I need to rearrange my freezer so that I can have room for leftovers.

@KristenH I don't see why not. Use any meat that you want to. I like to take some of what's left and make beef stew.

That sounds delicious. I'm running out of freezer space as well and need to clear it out this weekend somehow. I wonder if you can do a vegetarian version of pot roast by changing the meat.

@velvet53 Okay. Some meats are going to be hard to swap like pork chops for example. I don't know you can do a roast with chicken or turkey, unless it's a whole one. My pot is small though.

@KristenH some you can, depends on what it is. I would get some freezer safe bags or whatever, and try a small serving on the ones you know you liked, then see how they freeze

@Jessicalynnt I have freezer gallon bags. I would try it next month for my leftovers and scoop a small helping of it. I do prep them in bags until it's ready to make them.

That what I did for my leftover rotini. I freeze the dry ingredients to make for later. Not sure if you can freeze a cooked crockpot meal.

We have not really tried using our crockpot lately. Probably should as my husband makes an awesome Spaghetti sauce from scratch that he makes from time to time for potlucks or we make some up and Freeze the other for future meals. Might have to consider doing this again soon.

Maybe you should. My SIL makes her own spices and spaghetti sauce too, which are both gluten free. It's a real time saver in the kitchen.

I made a crock pot Hawaiian Chicken from Pinterest and used crushed pineapple. It was really tasty and better than using chunk.

It was probably from the same Pinterest recipe. Yeah it was. The next time I do it, it would be with crushed pineapple.

I make boneless beef ribs in the crock pot, very good. I also made cubed beef that I put over rice, though it would also be good over mashed potatoes.

I used to have a crock pot but it became expensive to use to to the electricity cost. Corned beef was good for them.

Go for it. Mine's only 1.5 quarts, though I see recipes for the larger ones. I just cut the ingredient measurements in half for mine.

I love my crockpot! Those recipes you tried sounded really good. I'm aiming for making two new recipes each month, I don't know what they'll be yet though... tomorrow I want to make an old favorite chicken with Italian seasoning
