I made a new soup tonight

It has been rainy and drizzly all day. Hubby brought home the Italian sausage I have been asking for, plus garlic so I could try a new recipe for soup. It is supposed to be similar to Olive Garden's Zuppa Toscana. This soup has Italian sausage, potatoes, garlic, onions and kale or other greens. Chicken stock is the base and heavy cream goes in at the end. Sprinkle with Parmesan cheese. Of course salt and black pepper to taste. If you use sweet Italian sausage, you add a little crushed red pepper. If you use hot Italian sausage you can skip the red pepper. I did not have any hearty bread to serve with it. At Olive Garden you can get soup, salad and bread sticks for a meal.

I have made a soup similar to that, but I don't remember the name of it. Actually, I think it's similar to several Italian soups. It sounds yummy!

@GardenGerty The more I think about it, the better it sounds. I don't have Italian sausage but I can cheat a little. I can't eat pork, so it's chicken sausage, but really good.What kind of greens did you use besides kale?

@GardenGerty That sounds like a good mix. I have some wild greens yet that would be good in it. I was just curious to see if there was a certain type you used. I think it would be best with sausage, but that's just me.

I seldom use recipes, but I have seen several versions posted, so I wanted to try it. I love the greens in it.

It was very good and we will eat it again soon as there was plenty. Tomorrow is the day hubby gets his heart cath.

@celticeagle It was long as he worked his hours before we went to the Heart clinic. Even though we were there fairly early, they had several emergencies they had to deal with as well as scheduled procedures. I know of four procedures that were scheduled, and was told about three emergencies in the afternoon and also was told there were some in the morning.

The authentic Zuppa Toscana (the Tuscan name is Ribollita) has not at all cream in it and it has beans, carrots and celery in addition to what you mention. You make garlic croutons to serve with the soup.

That sounds good to me. White beans, I would think? I will be making more soups as the weather cools. It is a healthy way to eat.

I'm usually not a big fan of soup except in the rarest of cold winter days, but this soup you described sounds absolutely delicious! I'm a big fan of Italian sausage, so I can imagine how great this soup of your tastes!

Soups are very healthy and I should make them more. Usually we have potato soup, or chili, or clam chowder or Pinto beans.

@GardenGerty I actually like many different varieties of soups, but I prefer to only eat them when it's really cold out, and well...I live in Florida and it rarely gets cold out! lol
