Thankful for a slow cooker

I did end up taking hubby to the nearest ER, because he could not have handled the two hour trip to his urologist without some medical help.
From there, after he was evaluated, and assisted, we drove to Salina, two hours away, to see the urologist.
First thing I was thankful for: I had put some Subway gift cards in my purse at the first of the month. We were able to buy lunch, which we both needed. We got on the road quickly.
Before I left the house this morning I pulled out a ready prepped meal already in a crock pot . It smells heavenly.
If I had had to fix an entire meal from scratch this evening, it would have been peanut butter sandwiches and a can of soup.
Instead we have pork loin chops, with onions and mushrooms. I browned them last night, then put them and some onions and mushrooms and a can of onion soup in the slow cooker on low.
I have made potatoes in the microwave, and we shall have some canned green beans.
It is a feast.
Good thing too. Hubby's iron count is very low. He needs to eat good foods.

Mmm. That does sound good. He needs lots of spinach in his diet. Real concord grape juice and such.

When we went to Subway I got the meatball sub and had them put spinach, red onion and black olives on it. The marinara helps with the iron absorption. Oh, and an oatmeal raisin cookie. Red Cross always recommended eating raisins.

We are going to see the doctor again next Monday. Hubby is on an antibiotic again, and he is catching up on the sleep he missed last night. I have several slow cookers and could set up a relay of good food if I needed to.

That is really good that you have them then.
Trusting all is okay have a good night the both of you.
Maybe it takes a bit of time for the antibiotic to kick in and do its work.

This time of year we want substantial hearty meals. Hubby had just picked up two packages of these pork loin chops on a buy one get one free offer. He needs to put on some weight.

@GardenGerty He's in the same boat as me. Nothing wrong with healthy and hearty meals in the crockpot.

Yes. He enjoys his red meat, but is not having a lot of appetitie. We are eating a wide variety of foods. We have to get the bleeding stopped, though.

He has a catheter, AGAIN and antibiotics. It is up to me to get his blood fixed up, but the ER here said he was getting close to the guidelines for transfusions. Not good. No wonder the guy is tired all the time. We go back Monday to this doctor, at a closer location. I want us to talk about treatment for the prostate. . . and it will NOT be hormone shots again. I think his bladder is okay, just weak from being on a cath. It is just the other contributes to the problem.

Slow cooker has been my new best friend.
I tell that to my husband :-)
Slow cooker is my best friend because it cooks while I sleep at night and then in the morning I don't have to worry about preparing breakfast, but at times for dinner too :-)
I hope that your hubby is feeling much better now Heather
