Quesadillas for Dinner

Quesadillas are always a favorite for dinner. This is one dinner I do not mind having from the freezer, to the oven, and then to the table. Add a dollop of sour cream and I am done! Maybe a little salsa on the side as well.
Quick dinners are the best this time of the year. I enjoy Mexican food as it is quick to fix. The cheese, oh my, the cheese makes it so good. Not so healthy but I only eat this every now and then.

I had the fish and chicken plate at a restaurant we frequent. I love a good quesadilla, I put salsa verde on mine. You are right, not healthy.

@CarolDM Jay's mother made corn-bread, out of white cornmeal while we were visiting. 'This is delicious, what is it?' My stupid question, that made eyes roll

@kobesbuddy We always used, and I still use yellow corneal. Don't think there is a huge difference in taste, only in color.

Melted cheese should be its own food group! No special food tonight. Today is a diet day; so I am limited to protein bars and yogurt.

Looks tempting... Hopefully, we can have that here. Maybe some Mexican restaurant is offering it here but too far away from our place...

Can you buy tortillas in the stores there? If so get a tortilla and some cheese that melts well (I always use mozarella and voila. You can add things like thinly sliced meat, but it's not necessary. What you do is you set the tortilla in a hot pan of hot oil and then add cheese, let it melt for a minute (but no more) and then fold the tortilla and flip it.

Looks yummy!! Mouth-watering :) I like Mexican food as well. I haven't explored it that far. But whatever o had I liked most of them..
