I cooked the most delicious risotto.

The last time I went to the farmers market I bought a kilo of mussels. I ate some with mayo (I was alone) and froze the rest it its water. Today I got it out and made a delicious risotto. I had enough mussel´s liquid to have it specially aromatic. After the vet finally went away, we had our lunch with Leticia. I even ate seconds. I am now wondering whether I should eat the leftovers for dinner or have them tomorrow. what would you do?

I think I'd be eating it. Risotto always sounds difficult to make.

Risotto only means rice in Italian. It is an easy dish. I cut up all the veggies I will use before hand so that I can concentrate on the rice later on.

@marguicha NO risotto is a way to cook riso in Italian, risotto does not mean rice, riso means rice. I am Italian, believe me!

It is easy . I always cook it when my vegetarian friend comes for dinner. The only problem is that it has to be stirred.
