Powdered eggs

People give my sister stuff and if she does not want it, or know what to do with it she gives it to me. She was given some envelopes of powdered eggs. My memory of us getting this from a food bank or some place is not pleasant, but . . . It is fifty years later, I am doing my own cooking, and I love to economize. I am pretty confident that this will work well for baking. I have a recipe I want to try. As a sample this morning I made scrambled eggs. I heated a skillet with butter and poured in a half cup of egg mixture. I strained it to make sure all the lumps were gone. It seemed to cook up well. When it was nearly done I added salt and my spice blend. Threw in some ham cubes and sprinkled a little blue cheese on it. It was tasty enough I would do it again. My sister gave me five packets of powdered eggs. Each packet is equivalent to ten eggs. One quarter cup is the same as one egg. So how about it. Do you ever use powdered eggs? I do not know if you can buy them just anywhere, except maybe a "prepper" store or in camping supplies.

I made my own powdered eggs, I still have them sealed. I wanted to see if I could make hem and I did.

Instructions, please. I would consider doing this to have back up supplies when I get eggs so very cheaply.

@GardenGerty Use a fruit roll up tray and dehydrate them, I am thinking it was 12 hours, but you will know when they are dry. Beat them before.

I did not even know that powdered eggs existed, but I was raised on a farm where we had laying hens and sold eggs.

I remembered this from ages ago. I am sure you can get them along with other camping foods. I would not buy them, but they are free, so I will use them. Mostly in holiday baking. I get my eggs at Aldi, it is a drive to the store but they are 1/3 the price of other grocers and have stronger shells and a nice dark yellow yolk. That says the Aldi eggs are better than the others. My grandparents kept a few chickens and so I know farm fresh eggs are the best.

That would be handy to have in case of an emergency. I'm always looking for pantry items I can stock up on for hard times.

no ma'am, can't say i've 'd the pleasure 'f such. glad ya put 'em to use though. the aunt's gone to purty much dehydrated e'erythin' - but eggs.

I have never heard of powdered eggs until now but now I am interested. I think they would be great for when we go camping.

Yes, they would be handy for camping. They are good scrambled and would make good french toast or in pancakes.

I am sure that is where they originated. My mom never made the effort to make them really good. I think we had them once or twice. Same with powdered milk. I keep that around for cooking, too.

Powdered eggs - I had no idea that even existed! I can't recall ever seeing them in stores, but then again I've never looked for them. I wonder if that changes the taste or textures of recipes?

Yes, it is an economical way to store them for later use. I imagine the government would buy up surplus and then distribute the dried product.

I remember Mum talking about powdered eggs when WWII was on. She thought they were awful but no doubt they've improved the recipe since then.
